fancy making a thick warming soup, ive got:

carrots, parsnip, onions,peppers

if i bung in a pot, boil up then whizz in blender will it be disgusting?

got any good recipes?

Peel and slice onions, gently fry in butter/oil/both until very soft (keep the lid on, 20min or so) then bung up the heat a bit to brown them a little. Meanwhile dice all the other veg and boil a kettle. Add veg, stock cube/powder, herbs (black pepper, bay leaf, anything you fancy even curry if that's your thing) stir around a bit then slowly add boiling water. Make sure to scrape the bottom of the pan as you add the water. Simmer until the veg are cooked.

You could also add a drained tin of beans - not baked beans - or a handful of freezer veg.

When it's cooked you mi8ght want to add a little splash of white wine or sherry (you can cook off the alcohol if you are concerned about LOs) or some cream. Should be nice. I'd do it myself if I could be a*sed to get up off my bum - jacket potatoes for supper at the Candelabrum.

Drop the parsnips - they make a soup taste 'metallic' to me (although I love a cream of parsnip - made with just parnsip!) add potatoes instead, with carrot and onions. Add lentils/peas/cooked meat and don't bother whizzing it - it's a 'big' soup.

Sounds good but dice the veg and dont blend. Or just blend a bit for some thickness.
