What to do with far too much spinach

So, I am guilty of planting too much spinach in our little garden plot. It has suddenly become very hot here and it is already fixing to bolt to seed.

Any bright ideas on using up too much lovely fresh spinach? I expect I will have two or three big bags of it (like the bags of salad greens at the supermarket).

I make a pasta with lots of spinach and use it in salads but this much is a challenge.

I like the idea of freezing it in ice cube trays. I was also thinking some sort of pesto with garlic and parmesan/pine nuts.

Spinach pancakes!

Just make normal pancake batter, and blitz in the rinsed spinach (I normally put some batter in the blender and blitz it bit by bit, stirring into the main batter bowl at the end.

I then make a quesadilla type shape with cheese in the middle of the pancake (dp likes to add mushrooms)

Freeze it fresh.
Break off whatever you need to use in recipes. I do this with whole bags of spinach and use in curries.

I freeze spinach then add to smoothies, curries, pasta, vegtable soup... anything really.

We use it in curries, also steamed with butter and minced garlic, or in omelettes, salads, smoothies - easy to go through that lot!

I use a full bag of the supermarket stuff as a side dish. I throw it in a wok and add cream cheese and cheddar. It's delicious.

I manage to wilt a whole bag down and melt in goats cheese and pretty much eat the lot 🙈

Freeze it fresh as whole leaves. Once frozen, it's much easier to crunch it up rather than chopping. Then add straight from freezer to curries, pasta sauces etc.

Just freeze it raw. Squash into freezer bag. Break off a lump when you want it for curry etc.

Such good ideas. I did forget how much it shrinks. I am going to try freezing it raw and breaking it off in chunks when I need it.

I am also experiencing a glut of rhubarb but no problem there, we all love it.
