Left over ganache....

I over estimated the amount of ganache needed to top a cake and have a bit (quite a lot 🙈) left over.

I was thinking of turning it into truffles this weekend, are they as easy as they seem? Can I flavour the ganache as is and then form into balls etc?

What else could I make? Any ideas? It’s far too nice to throw away...

Absolutely.

I add some vanilla essence to ganache.

Then just refrigerate for maybe 30 minutes, form into little round balls, refrigerate again so they set in the balls.

Then I dip the balls in melted chocolate and/or roll the balls in toppings - eg I’ve used desiccated coconut, dried raspberry flakes, crushed roasted hazelnuts, cocoa powder.

Ganache will also keep for a week or so in the fridge, or you can even freeze it.

You can also eat it as is with a spoon. Just saying. Grin

I'm actually impressed you have left over ganache, if I make any the locusts descend and scrap the bowl clean.

@MangoBiscuit I tried that, there’s still too much.... it’s ok though I have a Drs appointment later, me going off chocolate definitely requires investigation 😆
