celeriac - any ideas? (not soup)

One of my friends made a nice dish with it cooked, covered in cheese sauce and then baked.

I made this last week and it was gorgeous (even if I say so myself!)

Peel celeriac and slice (slices should be quite thin)
Wash and slice two leeks
Finely chop garlic - amount to taste, but I did 4 cloves
Grate some mature cheddar (as much as you like)

In a casserole dish that has a lid, layer the celeriac and leeks, putting garlic and salt/pepper on each layer.

Pour over a 284ml carton of double cream.

Cover the dish and then either bake in the oven until the celeriac is cooked, or cook on high in the microwave (probably about 20 mins).

Take the lid off and sprinkle the cheese on top and bake until the cheese is melted and golden.

mmmmmm santa claus, will try this one very soon.

I do a dauphinoise flavoured with cloves. works really well with celeriac ( and jerusalem artichokes too)

  • boil 1 cup milk with 10 cloves & bay leaf. rremove from heat and leave to infuse 10 mn then discard cloves & leaf.
  • peel and slice celeriac thinly and scatter in oven proof dish rubbed with a garlic clove.
  • mix 3 tsp creme fraiche with 1 cup stock and the milk. season with pepper.
  • pour over celeriac and bake untill liquid absorbed.

To make this a festive christmas side. Top with various wild mushrooms sauted in garlic and parsley.
