I have 8 for dinner this evening and have decided at the last minute that I fancy curry; will probably make two different kinds. Can I have your best (failsafe - am very pg and on another planet) curry recipes/accompaniments/ideas please.

Will be borrowing a rice maker thing so that is one prob down, btw, and can track down poppadoms in bordeaux.

Ok so one really spicy lamb one made with a tomato base with lots of peppers and onions and serve that with natural yoghurt. Stir some salt, lemon juice and chopped coriander into the yoghurt. Use well trimmed shoulder or neck fillet and cook it for at least an hour.

And for a veg one I often do butternut squash with red lentil and dried apricots. It is really easy and if you use lots of fresh ginger, garlic and a little less chilli it means there will be one to suit every one.

I make a really simple mango chutney by dicing mango and onions and cooking it with sugar and vinegar with grated ginger and garlic. Stir in lime juice and coriander before you serve it.

Coconut chutney too is really easy and impressive.

Carmenere · 17/11/2007 10:53

King prawns in spicy tomato and coconut sauce is beyond easy too.

ggglimpopo · 17/11/2007 11:59

my easy chickpea curry a must here I feel...

Chickpea Curry

1 large onion, chopped
1 1/2 tbsp vegetable oil
2 garlic cloves,crushed
1/2 tsp chilli powder
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp ground ginger
1 x 400g can chopped tomatoes
1 tbsp tomato puree
2 x 400g can chickpeas
450ml vegetable stock

Fry onion in oil until soft. Add garlic and spices and cook for 4-5 mins over medium heat.
Add remaining ingredients and bring to boil, then cover and simmer for 1hr.

Carmenere · 17/11/2007 12:18

You are most welcome, I will add you to my msn later as I am on the pc and only have msn on my laptop. And I am supposed to be doing housework atm

Well I don't have recipes as such but I will tell you how to do it.

I usually roast and grind my own spices but as you are heavily pregnant I think that if you could get your hands on Pataks paste it would do very well indeed.

So toast coriander, cumin and mustard seeds along with chilli flakes and the inside of some cardamon pods. Grind them in a pestle and mortar with salt, ground pepper and tumeric. I then add some per ground garam masala. I use this mixture for both types of curry and although it may not be authentic it is very nice.

So take your lamb and brown it in hot oil then add the peppers and onions that you have cut into decent sized chunks and allow to cook a bit, add the curry spices and grate in some garlic and fresh ginger. Add a couple of cans of chopped tomatoes, some tomato paste if you have it and some water to make sure it covers the meat. I add tamarind paste too but you may not have that over there so a squeeze of lemon juice will do.

Simmer it for an hour or more until it is delicious!

Carmenere · 17/11/2007 12:24

Veg curry

So sautee onions, garlic, chillies, fresh ginger and reasonable sized chunks of butternut squash in veg oil for a few minutes. Add spices and red lentils and cook a bit longer. Add some tomato paste and vegetable stock to cover and allow to cook for about 20 minutes (I usually add a bit more tumeric as I want it to be a bright orangey coulour)Add a good handful of chopped dried apricots and let it cook for a little longer. Tamarind is good in this too and the lentils will thicken it up nicely.

ggglimpopo · 17/11/2007 12:51

Thank you Tommy and Carmenere! I have a pumpkin glut - do you reckon that I could substitute that for the butternut squash (I do!)

Carmenere · 17/11/2007 12:52

I'm sure pumpkin would be great as long as it is not the watery type.

QuintessentialShadow · 17/11/2007 12:59

I am putting this on watch, I love curries.

I should have married Carmenere, shouldnt I. Are you cooking this sort of stuff all the time?

(IIRC, it is better to learn without but I used a swim vest with my DS as he didn't want me to hold on to him anymore! It gives more freedom I think as they can still use both arms)

thanks

Raita is also a very simple accompaniment - also useful if the curry is a little spicy for some!

Slice a cucumber and cut the discs into strips and mix with some plain yoghurt, pinch of turmeric on top. It can also be made with a small onion finely chopped and/or some mint leaves finely chopped.

I someitmes do a tomato and onion salad too. Add a few coriander leaves and mix with wine vinegar, a tiny pinch of salt and freshly ground pepper.

anorak · 17/11/2007 16:00

Fantastic recipes...ggg you are pregnant, how did I miss that? Congratulations - no wonder you have a curry whim!

ggglimpopo · 19/11/2007 08:53

Thank you all! I had two sous chefs (mil and dd) so we did all three - the chick pea, the dahl and the lamb one and a nigella vietnamese coleslaw starter. DD2 made a tarte aux pommes and dd3 made an exotic fruit salad and it all went swimmingly.

Everyone left around half two and I got to bed somewhere between half three and four. All in all a damn fine evening.

Now need menu ideas for next saturday night!

Thank you Anorak! How is Bermuda? When are you going to invite me?

Oh, did the raita and a banana and lime relish too. The latter gave the baby hiccups!

Glad it worked out. Isn't that awfully late to be up for a pregnant woman?

anorak · 19/11/2007 11:28

You're welcome here anytime ggg, especially if you plan to make me a curry while you're here! Just check with me before you book flights in case someone is already visiting at the same time.

Chopster · 19/11/2007 11:31

gglimpopo, you should have emailed me! I have tons of curry recipes. What you thinking for next weeks theme?
I made a lovely italian chicken and salsa from a new book last night.
