Easy, throw together meal ideas (for one)

I'm looking for some easy, throw together meals for one for lunch ideas (that's not the usual options of soup, salad, jackets, omelette, sandwiches).

I've been losing all interest for the typical lunch ideas quite considerably lately and end up grazing on chocolate biscuits.
I made Ham, egg and chips today which went down well. I'll also make curry to freeze.
I really don't have a lot of time around lunch so need to be something I can throw in the oven or airfryer or freezes well (but not soup) and gluten free.

What else can I make (beyond leftovers)? Thanks 😬

instant noodles with things like frozen peas, cooked chicken etc thrown in - can you get GF?

baked camembert with veg sticks

spanish tortilla

risotto

houmous, GF pitta bread, oilves, etc

Today I had a big pan of sautéed onion, bacon and cabbage, yum, could add a poached or fried egg or grated cheese

Also a fan of sardines (the ones in tomato sauce in a tin) on toast with lots of vinegar splashed on top if you have gf bread might be an option

Chorizo, spring onion done in frying pan for a couple of minutes. Mix with a packet of microwave flavoured rice (the Tilda ones). Yum.

Frozen edamame beans done in the microwave, tossed in garlic oil, chilli flakes and salt. With some crusty bread on the side.

Cod or white fish of choice smeared with pesto and topped with sliced mushrooms. Wrap in foil and bake. Could throw some other veg in there to roast with it. Serve like that or with microwave rice.

I do roasted veg - usually tomatoes, onion and garlic but whatever is lying around - with couscous and feta cheese. This is at least twice weekly as it's so easy and tasty.

I occasionally do v basic pasta things. Eg onion and bacon, or fried mushrooms, or fried courgette slices with garlic, chilli and lemon zest.

I also usually have Itsu gyoza in the freezer so will make a few of those for lunch. I recently saw a suggestion to do those with noodles, grated vegetables, fresh herbs and a sauce or even just soy sauce which I might try as I do find the gyoza by themselves aren't really satisfying enough.

DH often has falafel from the gluten free section, with salad. I like something tangy like coleslaw with it.

Orzo pasta with pesto and peas

Fry an onion, add a can of mackerel fillets, serve with pasta

If you can put in the oven to cook during the morning or are prepared to warm up: put 6 frozen quorn sausages in a bowl, add a can of chopped tomatoes, a can of black eyed beans (don’t drain), some garlic paste, and some washed new potatoes (I use 1-1.5 potatoes per sausage). Cover and cook in the oven for 2 hours.

Takes 5-10 minutes to prepare.

1 tin barlotti beans, rinsed
2 cans tuna, drained
C. 100g cherry tomatoes
1-2 crushed garlic cloves

Put beans in an ovenproof dish. Season and add a generous pinch of any dried green herb.
Halve all the tomatoes and place in a bowl with the garlic and a sprinkle of dried thyme or oregano. Add 3 tbsp olive oil and mix. Arrange a border of tomatoes around the edges of the ovenproof dish.
Flake the drained tuna in the middle of the ovenproof dish. Drizzle olive oil over the top.
Bake at 180 degrees for 30 ish minutes.

Easy and filling.

Serves 2.

I love a stir-fry. Chop any veg that needs using, or to be really quick use frozen mixed veg. Add perhaps chicken, prawns, bacon etc
For flavouring, think beyond Chinese. Try using herbs & spices to make it Italian, French, Moroccan etc.
