Nigella's 24 hour pork! Please help!!!

Hello you lovely people,
I am a long time lurker and have finally got the courage to ask my own question. Please excuse any faux pas.
I am wanting to cook Nigella's 24 hour Aromatic pork shoulder on the weekend and need some help.

My butcher can only supply a 3.5kg boneless rolled joint. Will this be enough for 6 adults?

Also because the recipe calls for a 9kg joint how do I adjust the cooking times for my smaller one?

3.5 Kg of pork is close to 7lbs, so it would give you a comfortable pound of meat per adult. A conservative portion of meat would be 6 ounces so your 3.5kg would feed even big eaters and you will still have leftovers.

I've never cooked this recipe but given that most slow cooked pork is cooked at a very, very low heat I don't think you'd have to make much of a time adjustment if any to allow for a smaller joint. If you want to be sure it's cooked through invest in a meat thermometer. They aren't expensive and will give you peace of mind that it's cooked through. Check it in the morning you wake up and then at hourly intervals. Once it's up to temp take it out and cover it in foil. You can then reheat it in the oven or the microwave before serving.

Hi OP..just read the thread "special roast pork" and someone has supplied the recipe with her own notes...

"(My notes ? I?ve never done such a big piece of pork, but have done this with a 3.5kg piece, which I roasted for 14 hours and which served 6-8. It sat perfectly for an hour before serving - luckily - disorganised as ever!)"

Left overs are lovely crisped up in a hot oven and then eaten in a baguette sandwich with cucumber and hoisin sauce.
