Does this recipe book exist?

I am so bored with food at home and need inspiration!

I'm looking for recommendations for a book (or a website/blog)with the following features:

1)mostly healthy recipes. Hands on prep time neds to be quick but long cooking time not an issue as am WFH
2)doesn't have overlong ingredients lists
3)recipes for two people or easily scalable down or extra portions can be frozen

I like Jo Pratt's In the Mood for Food. Its divided up into quick things to cook, healthy things, dinner parties etc and nothing is too tricky to make

I have hundreds of cookery books and struggling to think of one that really fits your bill. Jo Pratt’s In the Mood for Food, is a good shout but I have admit that most of favourites from that book aren’t necessarily healthy.

A couple of others that may be worth a look at Nigel Slater’s Real Fast Food and Diana Henry’s Cook Simple. Both are really old so you might be able to get a second hand copy cheaply.

The Eat Well For Less books are good. Lots of different recipes with many designed for batch cooking, or can be scaled down. Aimed at families so not tonnes of weird prep, just everyday cooking.
We love the Black Bean Enchiladas.

Vegetarian NOSH for Students has loads of simple recipes and a large number serve 2. There are also a few recipes which serve 1, but these could easily be doubled and those that serve 4 are usually freezer friendly.

The original Lean in 15 by Joe Wicks has some brilliantly simply recipes which work. You have to strip out the tweeness but, that aside, it’s very good. Also agree about Pinch of Nom, which is a very practical, no nonsense book with some really interesting recipes.

I’ve been intending to buy the traybake book as I’ve heard such good reviews, so will give that a go, too.

Deliciously Ella. You can substitute most of the weirder ingredients (cashew nut cheese?) for more standard ones (dairy cheese) and the recipes are very easy, especially her first two books (she couldn't cook so things are measured in "mugs").

I like Miguel Barclays books. Quick, easy and cheap! I like them because they're healthy though and I can make a meal in minutes most of the time.

Deliciously Ella Quick and Easy. It's only 99p on Kindle at the moment, and looks lovely. I'm not vegan so will happily swap and use dairy as pp above.
