Good "have some now, then some later" recipes

Hi all,

Does anyone have any good recipes for people eating at different times? My husband plays sport after work one evening a week and it would be great to find some things I can make at the usual dinner time, which are still good a few hours later!

Hot/cold, anything goes!

TIA

We have a similar problem with teens, the best answer seems to be any kind of pasta as it's easy to zap in the microwave. Or chilli, chicken curry, beef casserole etc...

Or you could have cooked salmon and just leave his cold to have with a salad?

Lasagne always taste better for being left and I love veggie stir fry with noodles reheated. Otherwise cold options would be easy- quiche, salad, potato salad, cous cous, smoked mackerel.

Quiche or frittata - both are equally good cold.

Meatballs! I cook in the oven for DC and then leave in the slow cooker on the 'keep warm' setting.
In fact, anything you make in a slow cooker can left for later diners.
Spanish omelette.

Pesto pasta www.bbc.co.uk/food/recipes/pesto_pasta_salad_72323 I normally double this recipe.

Chicken and chorizo rice www.bbc.co.uk/food/recipes/chicken_and_chorizo_rice_85780 (again, easy to double) and tasty eaten cold.

Curry's and soups reheat really well.

I’m after similar ideas (tho want to feed the DC earlier and me and DH later) here are my ideas so far:

Soup. Any kind of soup is great for this, many are pretty substantial especially with bread/croutons/grated cheese on top etc. If it has pasta or rice in then I’d separate out a portion and then let Dh add the rice or pasta to his later so it doesn’t turn to mush

Anything slow cooked like a lamb or beef casserole

Chilli

Risotto generally heats up well later on especially if you very slightly undercook it (doesn’t freeze well tho)

Potato bakes or pasta bakes will re heat reasonably well, again especially if very slightly underdone in the first place. Or you can even make two, one big dish and one small and leave the small one to be cooked later. (Depends if he can wait!!)

Sausages and chicken are generally nice cold as well as hot

Curry of any sort

Substantial salad eg we like Waldorf salad made with cold chicken, or a chickpea and feta salad (with lots of crunchy veg) is good in summer

I was also going to say salmon - serve with potato salad and green salad and his can go in the fridge once the salmon is cold. I cook salmon fillets wrapped in foil so it wouldn't dry out if you did that, just open the foil to let out the steam when cooked.

There's some great stuff here, might have to dust off the slow cooker. I try to make it something reasonably substantial as DH is usually starving. I have done "big salad" before (usually a Greek salad with chicken legs or something), but nice to have some variety!

Campfire stew (it’s a slimming world recipe but we’re not on the diet - it’s just a nice family favourite. Nice with jacket potatoes too) pinchofnom.com/recipes/campfire-stew/

Also this chicken, bacon and leek cottage pie (again technically slimming world friendly but just yummy and easily reheated) pinchofnom.com/recipes/chicken-bacon-and-leek-cottage-pie/

StillRailing · 23/04/2021 18:55

Huge amounts of potato salad as the weather warms. Goes with cold chicken, sausage, salmon.

Triffid1 · 24/04/2021 13:09

Agree with many of these. We have similar situation with DH once or twice a week.

I also sometimes do things like fish or meat that's fried or baked with veg/potatoes/rice where I'll cook the veg/potatoes/rice and DH will cook the meat/fish when he gets in because it only takes a couple of minutes.

EnterFunnyNameHere · 24/04/2021 13:24

Hmm I'm it usually one for prepared veg but I might also get some of those microwavable bags of mixed frozen veg! Some good thoughts here though, I'm glad I posted Smile
