Quince Jelly

Just made some quince jelly. It seems like it will set but the colour is paler than usual. Will it get darker over time?

Mine always got darker as I cooked it more. Where are you that you have quinces this early?

If it’s set surely it’s cooked long enough? I opened a jar of quince jelly the other day that’s probably 18 months old and noticed it was nearly black it was so dark. Think it just darkens as it ages.

Hi, I'm obsessed with quince jelly and didnt find any in the supermarket this winter... where are you finding quince and have you got a link to a recipe so I can make my own this year?

Ocado seem to stock it.

I get quince from a neighbour but if you can find (middle eastern shops might be a good place to look) Dian Henry’s recipe works for me.

Stephanie Alexander says that 3-4 hours cooking should turn the colour to fairly dark.
