Super quick 15 min meal ideas for fussy eater

Does anyone have any ideas for super quick meals please? DS(6) is an extremely fussy eater and I’m fed up of spending ages cooking only to have most meals rejected.

I always serve veges in a separate bowl but these are never touched, either cooked or raw (he has a fit if veges go on his plate).

He won’t any any vegetables except sweet potato; also won’t try/eat pasta, bolognaise, soups, lasagne, fajitas, pizza, chilli, stir-fry etc.

He will eat:
Toast/crumpets/breadsticks/crackers
Marmite/Peanut Butter
Baked beans
Jacket potato or mash (but a 50:50 rejection)
Sweet potato
Chicken/ pork / bacon / salmon / sausage
Korma
Rice
Houmous
Tuna (in a toastie)
Cheese (only melted, but 50:50 rejection)
Yoghurt/Milk
Porridge
Quiche (a Tesco bacon & egg one only, won’t touch homemade etc)
Apple, strawberries, watermelon (again, 50:50 rejection)
Banana (in a homemade smoothie only)

So, not much scope to plan meals with Sad
Tired of making mini roasts, chicken korma, quiche with beans and baked potato etc. He ends up having ‘picnic’ meals too often - bits and pieces of what he will actually eat. He does have school meals daily but apparently leaves the vege.

If he eats tuna/salmon and sometimes mash could you try fishcakes? Admittedly not particularly quick if you make from scratch but they freeze well if you make a batch or you can buy good quality ones in the supermarket.
What about gnocchi, either boiled or roasted. If sauces aren’t well received could just serve alongside chicken or with chopped bacon. Have you tried blitzing sauces until entirely smooth? Even if you need to pass through a sieve before serving. You can get some veg into a Korma sauce that way.
Would he try frittata? Eggs in any other form? Egg fried rice?
Chicken and sweet potato skewers?
Grilled haloumi?
Pastry of any kind?

You’re doing really well Flowers It can be tough with fussy eaters.

If he likes sweet potato, would he like baked sweet potato with your choice of toppings?
Poutine with sweet potato fries could be a quick meal.

Does he like curry or just korma? Try hiding some veg in the korma sauce, making sure it’s nice and smooth.

If he likes burgers, you can try adding shredded carrots in the patties. You can sautée them to soften so they mix well in the patty.

Does he just like plain chicken or is he ok with it marinated? And also in what form does he like salmon? Does he like meat? Might give an even better idea of suggestions.

I stir ground almonds into porridge and they are completely unnoticeable but add a good amount of protein and healthy fats.

I went through a stage of making my own sausage rolls using ready rolled puff pastry, sausage meat (I just squeezed it out of the skins of good quality sausages). I grated some apple into the mixture and I think some onion and mushroom and mixed it into the meat. I made lots all at once then froze them and they were handy for a quick meal. Veg was barely noticeable in them.

I know you said no pasta but I see he likes bacon and egg quiche - similar flavours to carbonara - perhaps that would be a good type of pasta meal to try.
