Freezer friendly recipies for a toddler

I try to batch cook to save money but its just me and a 2 year old at home so not much gets eaten straight away and most of what gets cooked is destined for the freezer. I'm finding that a lot of his favourite foods don't freeze well so I'm looking for some alternatives. I cook a lot of risotto, stir fry, cottage pie, toad in the hole and egg fried rice which I have found to be unsuitable for freezing.

We don't eat a lot of meat so I'm happy with vegetarian recipes or ones containing meat. The most important thing is that they are easy to cook because I'm normally cooking and entertaining my son at the same time. The kid loves rice so anything with rice usually goes down well although I've tried a few simple curries but my son has refused all of them, not sure why. Any suggestions appreciated.

Freeze bolognese and cheese sauces and then cook the pasta when you need it.

I think you're underestimating the power of your freezer...

Cottage pie is a classic freezer food surely?

Toad in the hole is trickier, but people on here often say they freeze yorkshire puddings so doing t separately could work?

I assume there ARE ways to freeze rice because I buy a lovely frozen risotto from waitrose sometimes! Grin so perhaps research that?

For other things, can you justify the added expense of rice pouches? They're so handy if you've got something that can just be heated up without having to wait for the rice to cook? I love love brown rice but hate the schlepp of cooking it so buy pouches for that and white rice for other days.

Lasagna freezes brilliantly. It's also a hassle to make so I always make enough to freeze. Both meat and veggie versions.

Bolognaise sauce - then just cook spaghetti to go with it.

Cauliflower cheese can be frozen. The cauliflower does come out slightly mushier than it would normally, but we don't think it's enough of an issue for everyday. We use a mix of broccoli and cauliflower which works well as the broccoli freezes better.

Tomato-based pasta sauces freeze well and can be heated up while you cook the pasta.

We used to regularly do "red pesto" - roasted veg and tomatoes with some olive oil. Once cooked, use a hand blender to blitz it all up, usually adding some cream cheese or quark and sometimes some walnuts. Stick in freezer in relevant portion sizes and serve with spaghetti/penne instead of green pesto!

Is there a trick to freezing rice and mash? The risottos and cottage pie come out of the freezer watery and mushy. I eat it because I hate to see it wasted but DS wont touch it and I can't say I blame him, its definitely not appetising.

I think I'll be giving the veggies burgers and red pesto a go at the weekend. Some nice suggestions here to try out and try to get a bit more variety in the meal planner.

I used to do a huge batch of bolognaise (you could do vegi version) and split it up - I'd add kidney beans and spices to make a chilli and also do a lasagne with some.

It would go with pasta, sloppy Joe's, tacos, jacket potatoes, on top of potatoes wedges with cheese (we call it dirty wedges).

I freeze cottage pie too with no issues. Just make sure it's cooled properly before you put the lid on and freeze it and use good quality foil or plastic containers.

Curries and casseroles are good for freezing too.

This is really good. It has meat in (gammon) but can also be made with jackfruit, or just leave out the meat and maybe add an extra tin of beans. Its basically beans and vegetables so does have protein in.

Any casserole will freeze. I like to add things like potatoes, pearl barley or mash so that you don't need to cook and separate cards to go with it, just serve with some steamed veg.
