If you are like me and have had a waffle iron in the back of your cupboard unloved for years, then I really recommend you try out this recipe. Beautiful, light, fluffy waffles with a slightly crisp exterior. This recipe is a little more effort than others, but 100% worth it, I have found many recipes online yield heavy or stodgy waffles, not the case here at all.

Nearly 240 calories each without any toppings though!

I don't think anyone eating waffles is under the impression they are a health food.

Also 240 calories is comparatively not that much for a breakfast item: a bowl of cornflakes is circa 215, low sugar granola circa 300... With yogurt and fruit this could fairly balanced breakfast: carbs, fat, protein, egg, fruit, dairy.

I actually find that level of fear/horror at eating something which gasp contains calories quite sad.

I make these every Sunday morning! Love them with honey and some Greek yogurt. They are yummy.
I've also lost 25kg in the last six months....

That's funny. We tried them this morning but they came out flat and not very nice. I think that's down to the iron though as I cooked the rest as pancakes and they were lovely!

I think you need to get the waffle iron temperature right to get the right texture. I also highly recommend Nigella's banana pancakes - I think they're from Feast

Ours is actually a sandwich toaster with a waffle insert. Is a stove top one better?

I tried these yesterday, I divided the recipe by three to make a smaller amount and I only put in about a quarter of the recommended amount of oil and they were very nice. They were extremely sweet though, with maple syrup as well as the sugar and vanilla in the waffles. I think I would serve them with yoghurt and berries next time.

Yes that’s the recipe I use, but try substituting the milk for buttermilk!

Interesting that these didn't work for some of you as I thought they were perfect. Some things I did which might have made a difference.

-I was careful when folding in the white to not knock too much air out.
-I divided the recipe by three as I didn't need a huge amount, this made 3 waffles on my iron. I wonder if having a smaller quantity meant there was less time for the mixture to deflate.
-I used my waffle iron on the highest temperature and preheated it while I was making the batter, so as soon as the mix was ready I could start cooking them.
-I use a basic plug in waffle iron (like the attached picture), though I think I remember Nigella using a stove top one on the show, so either method should work.
-Served with crispy smoked streaky bacon and maple syrup. I didn't find it too sweet at all, but I do have a sweet tooth, and the salty bacon may have balanced it.
-Also an extra tip for those who liked the recipe, they reheat well! I saved one cooked waffle in a ziplock bag and reheated on the waffle iron the next day and it was very good, got its crisp back and was still fluffy inside.

Nice tip on buttermilk @MissyB1, I will have to try next time I have some that needs using up.
