Tell me what to cook

I feel slow and bloated and lethargic. Too much Easter chocolate and junk over the last week or so.

I want something light, fresh and delicious for dinner that's satisfying but won't leave me feeling too full. But I just don't know what I want.

We eat pretty much anything, but preferably nothing too dairy heavy as that gives me an upset stomach. And I guess doesn't really fit the brief.

Tell me something to cook, and I'll make it. I'm going to the supermarket shortly so can get ingredients.

Depends upon how much you want to cook, but easy, filling but light would be;

Filled pasta (spinach/ricotta or the fancier beetroot and goats' cheese ones). Drizzle with olive oil when cooked. Serve on a bowl of mixed leaves, cheery tomatoes, cucumber, beetroot, spring onion, sliced radish with some olive oil/lemon juice/herbs and grate a small amount of strong cheese on top.

Baked sweet potatoes with cream cheese, loads of salad.

Jacket potatoes with cheese and salad.

Make chilli in the slowcooker (onion, browned mince, garlic, tin of beans with chilli sauce), have with rice and blue cheese tonight, leftover chilli with Jacket potato/sweet potatoes and salad tomorrow.

Make a thick tomato and vegetable stew (peppers, courgettes, aubergine, tin of tomatoes, tomato puree, onion, garlic) then have with baked chicken breasts sliced up and boiled potatoes, add chilli flakes and have with roast chicken thighs, white fish or tinned chickpeas added to it. Add curry paste and do the same with them.

Make soup. Vacuum packed beetroot, two boiled potatoes, stock and blitz. Cook sliced leek and blitz in stock with 2 boiled potatoes.

Vegetable curries.

You need fluid and fibre, plus nutrients. And to move around more to get your system working better.

Any of these useful or appealing?

Shakshuka?

Tacos with lots of black beans, veg and salad?

In addition: whilst I say cheese, it can be goat/ewe's cheese, which tends to have fewer digestive issues and the soups are all dairy free - obviously, add some nice bread (I like sourdough, flatbreads made from flour, salt, pepper, dried herbs, bicarb and yoghurt or crusty, not everybody does, though)

There's Salmon, new potatoes and green veg.

Anything that looks fresh and appealing in the supermarket, rather than boxes of frozen and ding dinners with biscuits and chocolate, really.

Lemon sole with ratatouille

Minestrone. Use up everything healthy in your fridge with tomatoes and stock and a handful of pasta.

Fish.

With herbs and lemon.

Potatoes.

Fragrant, fresh, easy.

Leftovers for us...sweet chilli chicken noodles, butter chicken and a chicken in white wine sauce. There was only one portion of each so I'll add extra noodles/rice so it does 4!

Probably too late, but this is a really nice (and easy) chicken dish from Marcus Wareing:-

Poached and roasted chicken with almond and thyme crust

I’d go with a really good salad or stir fry.
I like fresh tuna steak, plenty of salt and black pepper and some Nigella seeds.. A leaf based salad with celery, red onion, apple and gherkins. A balsamic dressing and a sprinkle of toasted mixed seeds.
Stir fry, I’d use, shredded carrots, onion, garlic, mushrooms, water chestnuts, bamboo shoots, sweetcorn, broccoli and pineapple. A bit of chicken breast if you want the protein, soy sauce and a dash of sweet chilli and lime juice. Simply but feels very virtuous.

My quick go to is tinned tuna, tinned beans, lentils and beetroot - u could also add green beans.
