So please can I have your advice on how to make a lovely beef stew that isn't to expensive and will have a lovely rich flavoured gravy - please

Oh and no mushrooms - my dd's don't eat them whole! ( no objection to soup, its the texture they don't like)

I put mine on the thread about meat recipes earlier. You could just subtract the mushrooms

TheMaskedPoster · 08/11/2007 14:35

this Beef Stew is divine!

ivykaty44 · 08/11/2007 14:37

I've been making the same one as TheMaskedPoster for the lat 3 sundays running, it is delicious.

Braising steak - diced
Veges (I do carrots, celery, swede, onions) diced.

Wack it in a casserole dish with a tin of toms and top up with water. Add a couple of beef stock cubes (don't tell MN police). Cover and put in a low oven (160-170ish)
Leave for 2-3hrs.
After that take it out. Taste test. Add some gravey granules (don't tell MN police) to taste and cornflour paste to thicken if necessary. Leave for another hour. Add dmplings if you wish 20-30mins from end. I always by a packet of dumpling mix that you just add water too. I have never successfully made dumplings from scratch so have given up.

Summary
Diced meet & veg in water with a couple of stock cubes in the oven for at least 3-4hrs. The longer the better. Thicken/extra gravey granules for the last hour.

Don't faff about coating in flour & frying meat. It is not necessary.

lol Flier ... did you see it on the program too?

We have been eating it at least once a week since then .. and then a vegetable stew with the left over veggies on another night.

Flier · 08/11/2007 14:43

TMP, yes, saw it on the programme, first time I'd seen it for a long while, mind, but tried to have it on most Sat mornings now, see if there's anything else that looks as good. I don't follow the recipe to the letter, mind you, but each time it has been lovely.

Must try the veggie stew....

Thinly slice an onion
Fry gently in butter for a few mins
Add some flour to coat and cook for a further couple of mins
Add 1/2 pint cheap red wine
Add 1/2 pint beef stock (ready made'll do)
Add herbs to taste (eg Thyme, oregano or some dried mixed herbs)
Pour into casserole dish over a packet of bog standard stewing beef.
Cook on a low heat (160-180c) for around 3 hours.
Viola - divine
I served this with a tray of roast vegetables the other week.

gameboy · 08/11/2007 14:45

Top tip - use a couple of cans of Beef Consomme rather than stock or gravy. Oh, and add red wine too. (You can thicken at the end with cornflour as necessary).

"Long and low" as my mum used to say for stews - i.e. a long time (2-3 hours on a lowish heat)

Yum!

ivykaty44 · 10/11/2007 20:54

Thank you everyone that helped - I have made two large pots (4litres each!) of beef stew/casserole

I put in
garlic
Onions chopped
Stewing beef (two for £5 in sainsbury this week)with a dusting of flour
Carrots
Parsnips
Swede
2 pints of vegtable stock
two tablespoons of tommy puree
tin of tomato
three small potato sliced into each

There is enough there for the rest of the week! I shall put it in the fridge and cook in the slow cooker a batch each day - to be fair it cost me £11 to buy all the stuff to make it so a cheap week shopping wise

Thanks again for the help
