Peppers stuffed with pesto rice / couscous bulgar wheat.

You could vary this however you want, but this is how we made it today. Get bulgar wheat and pour on boiling water. Leave to stand for about 25 mins until tender, then strain. Take one pepper per person and cut off a 'lid', then scoop out the seeds etc. Chop cucumber and tomatoes into small chunks. When bulgar is done, mix in the cucumber and tomatoes, plus some cooked beans (we did black eyed beans) and some sweetcorn. You can add feta if you like it. Mix all together and add plenty of pesto (red pesto nicest IMO). Spoon into the prepared peppers and serve.

Ds was able to do loads of the work and it makes a very nice dinner. In fact I have just eaten loads of the leftover filling out of the bowl [bloat]

we do this, minus the cucumber but pls garlic and bake in oven, juices that come out of it are scrummy especially when mopped up with bread

oh yes I have seen a recipe for it baked before, somehow I like it better raw. Is that a bit odd?

That sounds lovely - esp as DS can help. DS2 would like this, DS1 would eat the beans. I think I'd prefer it cooked though. Raw red pepper makes me...windy.

Ahh, you lost me rather at the 'get Bulgar Wheat' stage. My house is rather devoid of interesting forms of starch at the moment, since DH is rather old-fashioned about such newfangled nonsense as couscous . Trying to introduce him to bulgar wheat or quinoa would probably involve me hiding microscopic quantities inside a baked potato.

But it does sound nice...does it work with rice?

Here's what we had the other night, it was lovely, and made really simple because the sauce came from my bulk cooking reserves

Fill tortillas with previously made and defrosted veg chilli sauce, roll up and place in oven dish. Spoon over soured cream and sprinkle some cheese. Bung in the oven 180-200'c for 40-ish mins. Really nice served with salad (we had shredded stir-fried cabbage)

yes I am sure it works with rice gizmo. You know bulgar wheat is really nice though, it has a lovely chewy and nutty texture (much nicer than couscous IMO)

hunker I expect they make me windy as well, we will find out tomorrow

Tatties you are new queen of bulk cooking - working at weekends plays havoc with my bulk cooking prowess. If I have worked on Saturday morning I am buggered if I want to spend the rest of the day in the kitchen. And Sundays are for lie-ins

That reminds me of a funny thing ds did ages ago; one morning he was trying to get us out of bed, and dp said, "oh can't we have a lie-in?" to which ds replied, "RRRRRRRROAAR!"

I think this sounds nice, but personally would go for the cooked option.

am serving this to babysitter tonight, will she think it is weird?

I am sure this particular one is meant to be served cold, I mean you wouldn't cook cucumber, would you?

Don't be silly it sounds lovely and if she complains you can pop it in the oven for her and blame your hormones?

i wouldn't cook cucumber though, yucky!
