Celeriac soup, where did I go wrong?

In a fit of motivation to eat more veggies I decided to make Prue Leith's recipe for Celeriac soup. It ended up thin and bland, it was edible but not the hearty meal I thought it was going to be.

I made my own vegetable stock too so was really hoping for something tasty that was going to motivate me to make more homemade soups. Where might I have gone wrong?

Too much stock? - did you use a weight measure of celeriac or did it just say "one celeriac".
Too little seasoning?
I've never made celeriac soup without adding double cream, not sure it sounds very appetising without.

Like xdecd I always add double cream to celeriac soup (and fry up some teeny chunks of chorizo to sprinkle on top with drizzles of chorizo oil - although that does lessen the vegetarian nature of celeriac soup somewhat....)

Adding celeriac to soup when it tastes of feet. It’s pretty much the only veg I don’t like.

Seriously, it sounds like too much liquid. Maybe add the stock not all at once next time.

Too much liquid. You need just enough to cover the celeriac.
I use celery salt to intensify the flavour and blend in creme fraiche before serving. Lots of people and some nutmeg.

I had that too,

Celeriac does not thicken soup when blitzed, you need masses of celeriac and only a tiny amount of stock

Less than you think

The recipe must have been wrong

Maybe put in cream and possibly cumin? But I would probably just roast the celeriac with potatoes and other root veg myself. I find things like leek and potato, or tomato and lentil easier not to get wrong. Nigella (I think) has a lovely tomato soup recipe involving soaking bread in olive oil and balsamic.

I'm kicking myself for not having any cream in but also feel like the recipe was off.

It says 900ml of vegetable stock but only 250g of celeriac which was less than half of the one I had bought. Perhaps I just had too high expectations for celeriac!

I’ve had a celeriac and apple soup which was amazing, but more like a purée than a soup. Sounds like the quantities were off. Also salt. And some more salt!

The recipe doesn't sound right, I always do mine with apple personally as celeriac on its own is a bit of a punishment. I make it really thick with minimal stock.

Ah now you're talking, it was a veloute I wanted! So way more celeriac and then butter, cream and milk!

I like the sound of celeriac and apple too.

Will try not to be deterred from trying homemade soup again!
