Nice meat recipies...cheap and easy

I'm a veggie but i still cook meat for dp and kids, has anyone got any ideas? I wanted something cheap as i dont want to be spending ££££ on one meal

as i dont eat it, its hard to see what is nice or not IYSWIM

can anyone help me pwease

I made a lovely shepherd's pie the other day. It's a cheap meal, goes a long way and there's any left over you can freeze it.

Fry an onion. Add lamb mice. Add diced carrot (and any other veg you fancy), tin of toms, some veg stock and season.

Boils spuds and mash. Put mince in oven dish and spread mash over top. Bake for about 20 mins. Grate some cheese over top near the end. V.tasty!

What about a nice stew?

Toss stewing steak in some flour and brown in olive oil in batches. Remove from pan and fry carrots onions and mushrooms ( I also add a few pickled onions for a bit of zing). Return beef to the pan and add two tins of chopped tomatos and fill with beef stock.

Cook in hot oven for several hours and serve with mash

put some stewing steak - (enough for double what your family would eat so you can freeze half) a chopped onion, chopped carrots, swede, mushrooms and anything else you think they will like in a big caserole dish add about 1/2- 3/4 pint of stock, cover and cook for about 2 - 3 hours at 180 ish. serve with mash and broccoli.

Alternatively you could cook for 8 hours in a slow cooker if you have one. The meat goes really tender and melts in the mouth.

Sausage Hotpot (Have Nigel Slater to thank for this one )

Fry 6 sausages.
Mix together 2 tins flageolet beans and 1 tin butter beans (I have used other types if these not available) with about 3/4 bottle of passata.

Add 1 large chopped red chilli, 2 tbs grainy mustard, 1 tsp english mustard. Add 3 toms, halved. Add sausages and cook in casserole dish in oven for about 20 mins.

Add some chopped parsley at the end.

No, it's dead cheap!

Tinned beans = economy budget!

Passata is basically sieved tomatoes. You could use tinned toms instead, it would probably taste just as nice.

They will be with the spices in your grocers. They are little muslin bags with herbs in them. Or you can make your own by tying thyme, sage, bay, chervil, rosemary, or tarragon into a bundle together

flagelot beans will be less than 50p a tin I reckon. They will be on the tinned veg aisle with tins of sweetcorn, tomatoes etc.

You could roast a chicken - that is really very easy and you would have leftovers. Anything based on mince is cheap. So spag bol, meatloaf, meatballs, chilli, etc as well as the shepherd's pie that has already been mentioned.

I do one that DH calls 'inside out pie'.

Boil and mash some spuds. Line a dish (I use a lagagne one) with the mash and put it in a warm oven to 'set'.
Fry an onion until soft.
Add mince and cook through.
Stir in a tin of baked beans.
You can add mushrooms if you like at the same time as the beans.

Take the mash out of the oven and tip the mince/bean mixture into it.
Cover the top with grated cheese and pop back into the oven to melt the cheese.

It's a right pain to get out of the dish if you want it to look nice on the plates but it tastes fantastic and is really cheap and easy.

Oh and my take on sausage casserole is a bit different ...

Grill the sausages.
Put sausages, a chopped onion, a tin of beans, a tin of chopped tomatoes, a shake of worcester sauce and a shake of Italian herbs into a casserole and cook for about 45 mins.
Serve with chips or crusty bread.

Not overly healthy but dead easy.
BTW - the only reasons for grilling the sausages are to reduce time in the oven and to prevent the casserole from being too fatty. If you have all day and use low fat sausages (or don't mind the grease) then you can just put the raw sausages in - but it'll take at least an hour and a half in the oven.

On the butcher's counter at Tesco you can buy belly pork in a whole piece. I buy a piece about 18inches x 9 inches and this will easily feed 4 of us, with some left over.

(Ask the butcher to remove the skin.)

Lay the piece on a chopping board and sprinkle it with chopped garlic, lemon zest, chilli flakes, thyme, black pepper and salt, then roll it up tightly and tie with string. Put it in a baking dish and pour the juice of a lemon over the top.

Roast slowly in the oven for a couple of hours. You may need to put a bit of water in the bottom of the dish occasionally to stop it burning.

Slice up and serve with a green veg and some mash. Lovely!!
