The perfect lunchbox muffin recipe?

Has anyone got an easy go-to recipe for healthy-ish muffins please? Preferably the sort you can adapt, chuck in whatever fruit you have going over etc.

I know the internet's full of muffin recipes and I'm probably just being grumpy, but I feel like everything is either a "treaty" thing with 300 calories (add 200g butter or a cup of oil) or unnecessarily complicated (2/3 cup maple syrup and 3/4 cup Greek yoghurt and 5 tbsp milk and 5/7 cup apple sauce.)

I'm just after something really simple without crazy amount of fat or sugar. Any suggestions would be fab.

We used to make the baby led weaning cookbook banana muffins a lot. They have no sugar in them so are not horrible for you. I added raisins for flavour/moisture but you could easily add other dried fruit or nuts/ seeds.

I can give you a healthy flapjack type thing if that’s any good?

2 medium sized ripe bananas -mashed
2beaten eggs
2 cups porridge oats
25g dark chocolate (I use the moser Roth 85%dark)
Dash of vanilla essence.

Preheat oven (fan) 160.
Mash bananas, add beaten eggs & vanilla then stir in Oats. Bash the choc bar with the end of a rolling pin to break into little bits and mix in. Line small baking tray with baking paper & scoop in the mix spreading it and lightly pressing it with the back of the spoon. Bake for around 25 mins until golden. I cut it into 10 small, flat bars of 160 cals each.
I have made it in a loaf tin for a deeper slice but I don’t think it worked as well as a flat tin and needed a lot longer cooking. Could sub choc chips for cranberries, raisins and add a sprinkling of nuts to make it different.

The flapjack things freeze well btw. I slice and keep them in an ice cream tub in the freezer, slices separated by baking paper. I take one one out in the morning and it’s defrosted by the time I have my mid morning break.

We used to do cheese muffins as lower sugar. Obviously cheese then instead! Also cheese and onion muffins. Or cheese scones/ cheese straws.

Thanks so much everyone. I think cheese and onion muffins would go down a storm and flapjacks are always a good shout.

I will crack open our old weaning books too. Might keep that quiet round my 14 year old though!!
