Which is better - ceramic or tin?

I am cooking a mix tonight for dinner and was wondering which dish would be better to use. It will be sausages, onion, mushrooms, carrots, potatoes and garlic all roasted together with a bit of olive oil. I am sure it is all to do with how the dishes conduct heat but since I dropped Chemistry and Physic I need the help of you wise MNetters!

i'd go for ceramic myself
can serve from it too...

they both conduct tin prob faster (A in chemisty)
ceramic cassarole dish my choice

but will stand corrected if needs be onthe science...

Thank you.

Doesn't need to be on the science, was just interested in to the quickest way to get my dinner!

Think metal will conduct the heat better, but ceramic look more attractive!

Metal definitely better for pastry IME, makes it crisper. I think metal would be slightly quicker for your dinner but I don't think it will make a huge difference to the result for your meal.

Oh, it is only DH and me so it doesn't have to look good in the dish, just taste great in our tummies!

ceramic is better for me even cooking imo

zippitippitoes · 07/11/2007 17:33

more even

SoMuchToBits · 07/11/2007 17:33

I'd go for metal then.

haychee · 07/11/2007 17:33

I think metal better than ceramic if proper thick metal that doesn't buckle (as recommended by Delia), but if cheap crappy metal, then ceramic would be better.

SoMuchToBits · 07/11/2007 17:35

All right, why not put half of it in metal and the other half in ceramic, and see which turns out best (and let us know later!)

NAB3littlemonkeys · 07/11/2007 17:38

Will do ceramic!

Life really is too short for this, isn't it???!!!
