My DS 11 has a diagnosed gluten intolerance and I am waiting for my own bloods to come back but feel better (less bloated, sluggish and a lot more energy) when GF.
Trying to reduce the expensive snacks and make more from scratch. What are your best GF recipes?
I have found the "how to make anything gluten free" book very helpful.

My partner is gluten free and when I'm cooking for him I tend to avoid gluten free substitutes as far as possible. There are some ok ones, but by and large they are expensive and disappointing. We just try to stick to foods which are naturally gluten free. I'm vegetarian too so most of our meals are meat and gluten free and we feel we eat well. It's hard to know what to suggest without knowing what you normally eat, but here's a few things that I enjoy. To be honest at first I though that it would be hugely restrictive, but for main meals it really hasn't been. Baking is another issue...

I love Indian and east Asian food and I find it very easy to find good gluten free recipes. GF soy sauce (Tamari) is cheap and easily available and after that there are very few restrictions. With rice and rice noodles most recipes are fine with no substations, but I do tend to look for dishes designed for rice noodles such as pad Thai, as rice noodles don't work as a perfect substitute for egg noodles. Mexican food is also good and there are some passible tortillas from Old El Paso for things like tacos / quesadillas. Gluten free pasta is also a solid ok (spaghetti less so than short pasta).

I don't tend to snack a lot, only really fruit if I'm hungry between meals, but not sure what you normally eat so I don't know what to recommend, but happy to suggest alternatives to things that you normally eat.

On a side note, this is the best GF cake I've made so far.

Some of the recipes are naturally GF with others having been adjusted for GF diets. Some of the recipes don't work but others such as the lemon loaf cake are delicious.

Baking with GF flours generally needs a different approach. The batter or dough may need to rest to let the flour hydrate, and GF cakes tend to brown on top quickly even though they're not fully baked (they also tend to sink in the middle). Some bakes work better as a traybake or in smaller baking tins, but that depends on your oven and what you plan to bake.

An easy snack that sounds odd but delivers much more is made with GF mini pretzels, Rolo, and pecan halves. Place the pretzels on a baking tray and an unwrapped Rolo on top of each. Put the tray in the oven at 160 for two minutes or just until the Rolos start to soften (they'll look shiny) then bring them out. Press a pecan half on top of each, then put the tray back in the oven for no more than a minute. Cool before devouring.

To.be honest it's packed lunches and snacks I find most difficult.

I've always hated sandwiches, so packed lunches I like which are gluten free are things like sushi, Vietnamese summer rolls, tabbouleh, puy lentil salad or pasta/noodle salad, Spanish omelette. I love googling pictures of bento boxes for inspiration. Cold chicken, ham, eggs, some sausages, crustless quiches, potato salad are also also gluten free. Can you and your son take in flasks of hot food for soups? If you do like sandwiches, Warburtons have a tiger loaf and a sourdough, which are expensive, but apparently the best GF bread in supermarkets.

What snacks are you eating which aren't gluten free? Fruit, carrots and hummus, most crisps, most chocolate, nuts, rice cakes, sweets, cheese, and yogurt naturally don't have any gluten as rule. Gluten free oatcakes are available, as are cookies and both are good, if more expensive. Most supermarkets also have a range of GF cereals. Cake isn't great as general rule, but there are options. If there's something specific then I can let you know if I've found alternatives

We use most 'normal' recipes for cakes / biscuits but substitute the flour for GF flour. Most turn out ok (sometime a bit more crumbly). Adding a small amount of xantham gum helps.
We've yet to find a good GF bread recipe that a) tastes ok and b) keeps for more than a day without going hard / stale. We therefore buy GF bread.
In terms of meals, most of the kinds of foods we eat are GF anyway (meat, potatoes and veg etc). GF pasta is nice so it's easy to make spaghetti bolognese / meatballs or other pasta dishes. Lidl do nice sausages that are gluten-free. Co-op have a lot of GF fishy things in their normal range - all their fishcakes and a lot of breaded fish in the fridge aisles are GF (no need to look in the 'free from' section).
