Dairy light (no chocolate!) cakes for Easter? Inspiration please!

My teen has had a rotten time during lockdown and I want to bake her a cake at Easter that they would like, but they really can't eat a lot of chocolate owing to a diary intolerance.

I thought maybe a lemon meringue roulade?

Or a passion fruit bundt cake?

I would love to do something with raspberries or rhubarb but that usually involves a lot of cream or creme fraiche.

Does anyone have any inspiring ideas please? I'm a bit of an old-fashioned baker and could really use some fresh ideas and recipes that are reliable and definitely work.

Oh and I'm afraid she doesn't like Simnel cake either (in case anyone was going to suggest that).

If you use vitalite instead of butter you could make any of your favourites
Or how about carrot cake as tends to use oil,and for cream cheese tipping use lacto free or nush dairy free cream cheese?

Thank you so much StillLivinginaZoo it sounds ridiculous but I hadn't thought of either of those suggestions! I live abroad so not sure if there is a Vitalite equivalent here but I will have a look!

Carry cake with oil is a great idea and I can investigate the alternatives for the topping. Thank you!

Some SF spreads don't work/are vile
If in doubt hunt oil based cake recipe

Carrot cake would be my suggestion too - in my mind it's perfect for Easter as carrot > bunny > easter All the recipes I've ever used use oil as standard

Raspberries go very well with lemon cake of any description. I like to serve a few on the side with a lemon drizzle or in/on top of lemon layer cake or to decorate a lemon polenta tart, sometimes with a light dusting of icing sugar.

Ms Cupcakes vegan cake recipes are amazing. She has a cookbook out on Amazon. Uses everyday ingredients, such as milk substitutes and her cakes taste amazing!

I discovered them a few years ago now and DH has dairy, nut and egg allergies. These are my go to recipe and I've had so many compliments on them!

I like the sound of lemon cake with blueberries or raspberries !

I know I sound old-fashioned but all of these dairy-free and vegan recipes are new territory for me and so I am particularly grateful to be steered in the right direction!

If you’re using dairy free spread/marge for a cake then just check the fat content - ones like Stork baking block are 75% fat and others are lower, which can mean their water content is higher which then affects the sponge. I used a 50:50 blend of Stork (75%) and Pure (50%) in a recent birthday cake and it was perfect for both sponge and buttercream.

If she wants chocolate cake, you could make dairy free ring tin cake (sponge made with Stork) with Mary Berry's fudge icing here www.google.co.uk/amp/s/jackknightcooks.wordpress.com/2018/05/06/276/amp/ - replace milk with eg. oat milk or water I'm sure it would be fine.

Decorate with sprinkles of some kind and it'll look lovely.

It's very easy to make dairy-free chocolate cake using dairy-free spread instead of butter. You can even get dairy-free mini eggs to decorate if you want. Not sure which country you're in but organic/whole food shops usually have DF/vegan chocolate. Or order online.

I really don't recommend vitalite in baking, but Flora Plant and Stork baking block are both great butter replacements and what I regularly use when baking so you can pretty much make any cake using either of those.

Do check the ingredients though - Stork in a margarine tub in the UK contains buttermilk
