for 8 tomorrow night - need something quick and easy and no fuss at the time, not salmon due to 2 heads, lice etc.

Or shellfish

Hmm yes had thought of fish pate, am too lazy to get recipe books out...

Impressive and easy and you prepare them in advance:

Thai (ish) fish cakes.

Any fish, white or salmon. Mixed with breadcrumbs, lime juice, garlic, coriander, ginger, soysauce and egg. Roll them up into balls or little flat cakes and then just leave them until you're ready to cook them. You can add lemongrass, chilie etc. if you like, but doesn't matter if you haven't got them.

At ten to eight, chuck em on the pan and shallow fry in neutral type oil (cornflour, vegetable or sesame for a chinese flavour) they're ready in five to ten minutes. You can serve with a sweet chilie sauce, avocado sauce, satay sauce, or tartar sauce, but if you don't no-one will notice because they're too busy being impressed.

you did say easy and in advance....

buy some smoked salmon pate and wrap dollops of it in slices of smoked salmon. very tasty and quite impressive. lemons, black pepper, a few leaves all that's needed to tart it up.

I think that this explains it Kate Although it doesn't seem to be a problem here in the Pacific NW, as we get mostly non-farmed salmon.
