Green beans, ideas please

I have a glut of green beans in the freezer from last summer. Slightly too large for just steaming and DC refuse to eat them like such.
Had the most glorious slowly cooked ones in Florence and wrecking my brain how to replicate. Simple stuff it was, garlicky, soft, and utterly delicious. Mine stay watery and chewy.
Any ideas as to what to do with them, please?

Toss them in olive oil, sprinkle liberally with salt and pepper, and spread out in a single layer on a large baking tray. Roast at 200c for about 20 mins or until they are charred in places. Add a generous amount of freshly grated parmesan and 2 crushed cloves of garlic. Toss it all together and serve.

Frozen ones won't have that lovely texture.

I make my (many) frozen beans into curries. Roasting is also nice.

Make green beans a la Greque with them. Gently cook finely chopped onion until transparent, add some garlic and some chopped tomatoes ( fresh, tinned or frozen) continue cooking while you cook the beans. Drain the beans well and add to the tomato sauce, continue cooking for a short while till well combined. You can add some tomato purée if your tomatoes are lacking colour.
Serve hot with dishes such as baked ham/gammon, lamb chops or a chicken bake, goes well with white fish too. Can also be served at room temperature with cold meats, tuna salad etc.

You can do the same thing with mushrooms (good for using any slightly past their best) and serve on toast for lunch, or as part of a tapas selection, or with chicken salad.

I think I ruined my glut of green beans last year by par-boiling then freezing. They end up really soggy when I reheat them. Did you par-boil your first or freeze straight from harvest? I'm new to it all.

I chuck mine in Thai curries - but I really like the sound of the garlicky parmesan ones!

Blanch, serve with v lightly fried crushed garlic and lemon zest as a salad to go with roast chicken in summer.

Mac n cheese www.bbcgoodfood.com/recipes/green-bean-mac-n-cheese

Pie www.sainsburysmagazine.co.uk/recipes/mains/speedy-ham-and-greens-pie This is easy to double and I leave out the watercress as my dc don’t like it.

Fry them with garlic, chili, peas and finely chopped courgette and plenty of olive oil.
Add to freshly cooked spaghetti
Yum!

Thank you all, marvellous ideas; love the Greque recipe, remember eating it in Greece, of all places Grin
No, I am far too lazy to par-boil anything. Also far too greedy as let the buggers grow too old/big - wanted more bean in the beans. Hmm
The baking one sounds delicious, will try this as well.
Chucking them with abandon into soups - thinly sliced into little circles in food-processor - and stews/curries. Have still quite a lot to go through.
The frying with garlic and chilli sounds lovely as do the speedy pie and mac and beans.
Thanks again!

Rick Stein does something with older green beans in Venice to Istanbul I think. Worth a look

Szechuan dry fried green beans are the best! Always get them when I order a Chinese. I keep leaving to try making them at home although I haven't attempted it yet, but there are lots of recipes online...

Nowisthemonthofmaying · 06/03/2021 20:30

meaning not leaving

redcandlelight · 06/03/2021 20:30

TimeforaGandT · 06/03/2021 20:32

A few years ago I put some on the hob and completely forgot about them for an hour or so. They were nearly boiled dry and had gone a grey colour. I was going to chuck them but at the last minute drizzled them in Olive Oil and lemon juice. They were lovely!

massistar · 08/03/2021 12:22

My Italian MIL does them in the pressure cooker with tomatoes and garlic. It comes out like a soft squidgy stew. Divine!

ChangedName4TheSakeOfIt · 08/03/2021 12:37

I fry mine in butter and garlic with lots of pepper and a pinch of salt. Very simple, very tasty.
However, they're nowhere near as nice after being frozen so I tend to use those in a curry.

jackstini · 08/03/2021 15:01

Dry fry gently then sprinkle some toasted flaked almonds on top

Use some in a salad Nicoise?

StrictlyAFemaleFemale · 08/03/2021 15:41

Jamie olivers salmon parcels are lovely and v easy.

StrictlyAFemaleFemale · 08/03/2021 15:42

requitalissima · 09/03/2021 09:38

Oh. you marvellous lot, brilliant, thank you!
Made the beans el Greque as suggested above and had it baked with loads of mozzarella on top and also as a room temp mezze to go with koftas etc. Fantastic!
Shall try the lemon casserole next!
