recipe help .. about pumpkin (of course)

Have a recipe for pumpkin muffins and have promised to make some for a party

it needs a tin of pumpkin and says to use 7 fl oz

so I have just disembowelled our pumpkin .. what do I do with the pumpkin flesh .. do I stew it then mouli it or do I mouli it without cooking it ..

if I cook it .. can I microwave or do I cover in water

I have done a lot of cooking with pumpkin. I grew up in the States and it's a big thing for Halloween and Thanksgiving.

I recommend baking your pumpkin. Cut the pumpkin in half, de-seed it with a spoon and bake in the oven (cut side down, on a foil covered baking sheet), at about 180C. How long depends on the size and thickness of the pumpkin. It should be soft when you press on the rind (use a tea towel to cover you hand when you test it). Remove when soft, let it rest cut side up until cool enough to handle, then scrap out the soft baked flesh. If your pumpkin is stringy, you maybe want to push the pulp through a sieve using the back of a large wooden (or metal, I guess) spoon. Then measure the pulp. Canned pumpkin is cooked and strained. PS: If you have already cut it up, I think you could cut it up as well (more work to de-rind it raw) and steam it. Putting it in water to boil will make it mushy and watery.

thanks .. I ended up bunging it in the microwave for about 5 mins .. and then mouli'd it .. hopefully the muffins will work
