How long does risotto take you?

Typing with one hand stirring risotto with the other....

I love risotto, but it take me an age to make - adding a little bit of stock, stirring till it's absorbed, adding more and repeat.

It's usually at least half an hour to absorb all the stock, probably more. But every recipe I read implies it's a 15 minute job! I also always use lots more liquid than the recipes.

I don't mind it, in fact I find it a bit meditative. But am I doing it wrong or are the recipes over optimistic?

What is an instant pot? I have never heard of one but I feel like I need one now ....

If it’s butternut squash risotto I use my instapot. Otherwise it’s oven baked risotto from good food website every time.

It takes me about 30-40 minutes cooking for two.
We love it, but I need to be in the mood to stand and stir.

Yes I agree with needing to be in the mood to make it! It's one of our favourites but a half hour of standing and stirring is something I just don't have the will for most nights!

Weekday risotto is al forno Posh, ie proper, risotto is for the weekend (although DH can always tell if I've had a bad day at work because it'll be proper risotto for supper - aka stirring therapy)

Its one of my favourite recipes, and I do the 'correct' way, and don't mind that much, but I find the length of time taken depends on the make of risotto rice you are using. One if the fastest came from Costco. Now I live nowhere near one, I'm back up in the 30+ mark.

I agree with it taking best part of an hour of stirring.
Would it be possible to make it in a slow cooker?

I've recently discovered that stirring makes no difference, I just whack it all in and don't even fry the veg first:
One finely chopped onion, a punnet of sliced mushrooms, 300g risotto rice and 1litre of stock in a saucepan. Stir, bring to the boil then simmer on low heat for 25 mins. Turn the heat off and stir through some frozen peas and add salt and pepper. Perfect every time.

I tried it in the slow cooker once and it turned to gloopy mush.

I couldn’t be doing with the little stock and stir method. I throw it in the Aga in one go. It is exactly the same as long as timed properly.

20-25 minutes once stock first added. I agree with fast boil. Start with frying onion, add rice for 2 mins frying. Add glass of white wine if using. Keep stock warm by having it in saucepan next to risotto pan so it doesn't cool the rice when you add the next ladleful. Add a ladle, boil until you can pull a wooden spoon through the rice and it doesn't immediately spread back then add another ladle. I do stir a lot.

I find different risotto rice take different times. I used one expensive one and it took forever, but for 3 of us with sainsburys arborio, five mins to heat the rice/other ingredients, 15 mins with water and heat then 5 mins just sitting there no heat.

There might be a variation in cooking time depending on how many you are cooking for.
