What's your favourite vegetable stew please?

Just that really. Looking for inspiration for an easy to cook veggy stew.

That looks nice Miranda. Do you think I could make it without a pestle and morter or casserole dish? I can't cope with cooking swede either - could I use potatoes instead do you think?

@Gwenhwyfar oh yes, don't faff with a pestle and mortar. You could add any root veg really, I think the chestnut mushrooms, red currant jelly and mustard are key though. The recipe derives from using leftovers anyway.

Don't need a recipe.

Basics: onions, carrots, garlic, bay leaves. fry gently.

Then add whatever veg you have in the fridge or larder. Some liquid - stock or wine or water. Spices or herbs to taste. Maybe someone squirt of tomato puree or slosh of soy sauce.

Bung in a can of pulses of your choice at the end. 2 if there are 4 of you.

Serve with rice, quinoa or mash.

Pretty sure I couldn't find red currant jelly. I also just decided to forget about the pomegranate seeds.

Well, I tried just putting in what I wanted and it wasn't very good. The pulse I like is chickpea, but I need something that can be reheated in the microwave and I've had chickpeas explode in the past. I'm also looking for one that will be a meal in itself - don't want to have to cook rice, quinoa or mash as well.

Thanks Pippin. I had to look up what tomato paste is, but those are all ingredients I think I can find.

I assume that tomato paste is tomato purée? That’s what I use anyway.
