Easily 24h if there's no raising agent. I'venot tried it, but would have thought 2-3 days in the fridge.

I'd do a day in advance, but not much longer.

I would make it half an hour before you need it. It only takes a couple of minutes to whip it up. The pedant in me wishes for the correct term Yorkshire pudding to be used, please. I'm presuming the OP is from the South-East. No offence meant, I just like to call a pudding a pudding...

If you're in a rush, 'speed' would have been quicker to type than 'quickness' .

I have been told, putting the mix in the fridge to chill helps them rise. Please correct me if I am wrong in my pudding making.
