Help - vegan recipes wanted!!

My son has just phoned and asked if he can bring his new girlfriend round. She is vegan! We are not. Any ideas on what we cn feed her?

There are still some great english tomotoes around in the shops. I would gently fry some garlic and chilli in a fying pan. Add some rougly chopped tomotoes and gently heat through still toms have just started to disintergate. Meanwhile cook some pasta. Toss the toms in the pasta with some chopped herbs and olive oil. Serve with simple green salad.

Thanks all - am about to look at vegan society site which one MN said is good. Excuse my ignorance but, basically, is a vegan a vege who doesn't eat ANY dairy products! Bloody Hell - wish she was just a vege!! We are all carnivores - included DS so don't suppose this will last long

yup no dairy products or eggs. Many vegans are much more careful than ordinary veggies about what goes into manufactured food so many crisps, biscuits, soft drinks etc will also be out.

My experience is that there is a type of vegan who is just looking for a way to restrict his or her food intake. No saying this woman is one but personally i would not spend hours in the kitchen until i knew that she was going to enjoy what i made.

I had a vegan round for dinner once - I just did pasta and a herb bread (i.e. not garlic butter but I guess you could do it with soya marg)

I think the thought if it is probably worse than the actual doing it IYSWIM

Cut in half some cherry tomatoes, bung them in the oven with a glug of olive oil, a chopped garlic clove and some salt and pepper. Roast for 20 minutes until the juices run. Toss into hot pasta, with a bit more oil if nec.

And don't forget to exclude honey - we don't have it and I think that most vegans don't.

Marinade some firm tofu cut in to cubes in soya sauce, smoked paprika, garlic. ginger and sweet chilli sauce. Fry in veg oil and then add to a stir fry.

Roast butternut squash and a bought nut roast (check ingredients for egg ect) with steamed greens makes a meal most vegans will enjoy.

Simply fry some mushrooms in olive oil and crushed garlic and use to coat pasta (pref. wholewheat)

A bean stew made with tomatoes, peppers, any type of bean (espesh chickpeas), carrots, celery, onions, garlic and spices such as cumin and coriander seed. Simmer for a while till everythings cooked and mulled down. Serve with some rice and peas.

You can make a vegan choc. cake simply by replacing the dairy milk with soya, the butter with margarine (check label) and then eggs with a banana or some peanut butter.

Chickpea burgers made with onions and garlic plus mashed chickpeas, breadcrumbs, and spices, and fried pr bakes then served with potato wedges and salad.

And while some people use veganism to mask an eating disorder, it is NOT and 'type' of veganism. We're not skinny and malnourished or restrictive on our nosh in this house!

We had butter bean mash tonight - My fave!

1 large potato per person, cubed (leave the skins on)
1/2 to 1 can of butter beans for 1 person (I can eat a whole one, but I am greedy...)

I tbs margarine per person
1 tbs garlic powder or 4 cloves crushed garlic
1 tsp smoked paprika

Boil the potatoes till tender, then drain and add mag and beans. Mash well, but some whole beans are nice.

Serve with loads of steamed greens, and carrots.

Shroom - your recipe for bean stew sounds deelish -I think i might try that (butwith a bit of the leftover pork from yesterday!lol) but you also give a recipe for choc cake. I though choc was made with a 'glass-and-a-half of full cream milk? Oh - and can you replace eggs with peanut butter or banana? does it work?

Thanks - it is rather delish indeed.

The chocolate in my cakes is cocoa powder (only milk choc tends to use dairy)

My chocolate banana cake is very dense and chewy and delicious:

250g self raising flour
175g caster sugar (unrefined)
175g dark muscavado sugar
75 mls oil
300mls water/soymilk
65g cocoa powder - not drinking choc!
2tbs smooth peanut butter mashed well with 1 banana till smooth
You may also need extra water depending on flour ect.

Simply mix the dry ingredients and then pour in the wet ones. Mix well, and if it needs more fluid add some. It should be a runnyish but spoonable consistency.

Pour in to a tin and bake for 30-40 minutes.

Mix cocoa powder and icing sugar with soymilk and drizzle over, then spronkle with chopped nuts. Enjoy!

OOOOh shrooms - I'm going to make that tomorrow!!!(and eat the lot!) I might not spronkle nuts on top tho. if i spronkle at all, it'll be the multi-coloured spronkles.
