I've been doing a lot more sunday roasts lately. I like to do most of the prep on Saturday so that Sunday is still nice and lazy.

What are your favourite desserts that you can make a day (or two!) ahead of time and they keep well?

The Hairy Biker's Snow Queen (? I think it's called that! )is lovely. It's made from whipped cream, meringue and stem ginger and can be left in the freezer until you need it.

Trifle can be made the day before. Or a Swiss roll or meringue roulade. Or Banoffee pie. I'd only make desserts a day ahead though, never two.

Some ready made frozen desserts are gorgeous (particularly from Aldi & Lidl) you just take out of freezer that morning and they'll be ready to eat later. Cheating but who really cares?? You might just need some whipped cream or custard to go with them but they can be made day before or indeed bought in the shop too Wink

As a family man I have always liked to take care of my children's dental and physical health, I do not like to give them the most harmful sweets for the body, our desserts are always fruit or sometimes chocolate, yesterday we ate strawberries with chocolate syrup , a very good Fairtrade chocolate in the chocolateandlove store resuming, sweet fruits with sometimes chocolate syrup or honey, that is the dessert of my children.

I always prefer traditional puddings with a roast so would probably go with crumble or sticky toffee pudding. Steamed puddings would resteam - jam or treacle sponge, spotted dick - lighter than they sound! 'Magic chocolate pudding' (self-saucing) is gorgeous and I think would reheat ok although more of the sauce would be absorbed into the sponge. But it's so easy to make you could just weigh all the ingredients the day before and finish off v quickly on the Sunday.

Easiest and most complimented on pudding I make is Lemon Posset. James Martin has a great recipe.
