Jamies Dark and Sticky Stew

I've lent someone my copy of Jamies' Kitchen, and the person I would usually ring is very inconsiderately in hospital. Is there a really kind fast typer out there who will give me ther recipe please? I need the ingredients - and a quick summary of the method. I've made it once before, so I don't need details. Thank you in advance!

It's delicious, beenleigh! A really rich stew with sausages and barley. If nobody comes up with the recipe, I'll copy it down in a bookshop tomorrow and post it for you!

No, sady although that one looks good too! The Jamie one has barley and marmite - it's very unusual and compltely delicious!

No - although that looks another good one!

The one I wasn definitely has marmite and barley. I have tried googling it before and not come up with anything, so I don't think it's anywhere on the web, strangely.

found an adpted version

A Dark Sticky Stew
Adapted from Jamie Oliver?s Dark Sticky Stew in ?Jamie?s Kitchen?.

450g braising beef steak
2 tablespoons flour
2 sprigs thyme, finely chopped
2 small onions, chopped
3 large carrots, cut into batons
8 - 10 mushrooms, quartered
1 rib celery, finely chopped
125ml Guinness
500ml chicken stock
1 teaspoon Marmite

Preheat the oven to 170C. Combine the thyme and flour and toss with the beef until it?s coated. Heat some olive oil in a casserole dish, and brown the beef really well in two batches. Remove the beef and put to one side. Soften and brown the vegetables in the same pan. Then add the Guinness, reduce and add the chicken stock, Marmite and add the beef back in. Cover with a lid and put into the oven for 1 hour, or until the beef is tender. Serve with boiled potatoes (or even better, mash) and some cabbage or broccoli.

Serves 6

800g Stewing lamb roughly diced
sea slt & freshly ground pepper
1 small handlefull of fresh rosemary
2 heaped tablespoons flour
extra virgin olive oil
1 red onion chopped
8 filed mushroom cut in half
1 handful baby carrots
1 parsnip grated
1 dessert spoon marmite
2 tablespoons pearl barley
1/2 Guinness
1 pint stock
18 chipolata sausages
6 skewers

Pre heat oven: 180 c
Put lamb, salt, pepper and chopped rosemary leaves in bowl, add flour and mix until covered.
Fry in the olive oil to give them colour. put aside.

Fry onions carrots and mushrooms for five mins, add the lamb, parsnip, pearl barley, marmite, guinness and stock, bring to boil and simmer for 20 mins.

Skewer 3 sausages on each of the skewers.

When stew goes in oven add chippolatas, put lid on and cook for one hour.

Not sure about beef - it's quite strong flavoured anyway and beef might fight the other tastes. But why not try? You could always tone it down with more barley.

Seriously delicious. Making it again for a party next weekend. Be warned though, it is very strong flavoured and I think some little children wouldn't like it. My ds mostly ate the sausages. Mind you he mostly eats sausages most of the time, so no change there....

oooh - I would love to give it a go - DH is not sooooo fond of lamb - are the accompanying flavours strong enough to tempt him??
