Roasting veg? Help?

Hellooo! I'm new to the cooking scene. I'm wanting to make Parmesan chicken tomorrow with lots of roasted veggies! (Goose fat parsnips and then some carrots and mushrooms, broccoli and onion etc - I want to roast them)

Am I right in thinking I half boil them all before putting into the oven? And how long (and what number) would you guys recommend? Or just any other tips in general :) will the parsnips take as long as all of the rest? Do I coat the parsnips in goose fat after boiling?

My ovens a weird one ( goes 1,2,3,4,5,6) what numbers guys please help I don't want this to go wrong!!!😂thank you all soooo much in advance, I will post photos to show if it turns out good or... a disaster 😂 xx

To be honest I wouldn't bother boiling! I would just toss all in oil and seasoning and roast at your equivalent of 180 for 45 mins to an hour until they are done. Don't overcrowd the tray as they will steam rather than roast.

If you are roasting potatoes it is worth par-boiling them. For every thing else, just toss in olive oil & put in a hot oven.

Is your oven a gas oven? Those numbers suggest it is.

I parboil potatoes and parsnips for 5/3mkbs before roasting. Then drain them, dump them is a roasting tin on the hob with some fat, turn on the hob rings and brown the veg a little. Then roast - Gas mark 6 or higher - for about 40 mins for root veg. Stuff like mushrooms, courgettes, peppers will take about 15 mins - put them in later.

I don't par boil any root veg before roasting, why bother?

I wouldn't parboil mushrooms and onions but I probably would the root veg, although I think you could roast them all without parboiling but the root veg will take much longer so put them in first

Parboiling cuts cooking time and imo improves texture eg with potatoes means fluffy inside and crispy outside
