What shall I do with the Gammon Steaks I've taken out for the freezer to cook for dinner??

There's not enough of them to serve as individual Gammon steaks so I'm going to have to cut them up - but I need ideas,

I have mushrooms, peppers, onions, carrots, green beans, broccoli, peas, cheese etc etc - what would you do with them??

Breadcrumbs, tin of pineapple (in juice...drained), grated cheese, mix together, put on top of gammon and stick in the oven for 20 minutes. Serve with jacket spud and veg....scrummy

Depends how far you have to eke them out? Maybe a Spanish Omelette with gammon cubes, shrooms, pepper, onion and topped with melted cheese? Need diced potato and eggs (obviously) as well.

Spanish Omelette:

Fry onion, red and green peppers, and thinly sliced potatoes (canned or cooked potatoes cut down the time this takes), until everything is more or less cooked.

Add in anything else you like, including something spicy, such as chorizo sausage or chilli flakes. This is where you can use the ham, as well as sweetcorn, mushrooms, etc.

Finally, add plenty of beaten egg (to a depth of 1-2 inches) and cook gently until it is all cooked through. You can do the top by putting the pan under the grill.

I'm not sure a Spaniard would recognise my version, so will rummage for a link. Potato and onion are the key ingredients though.

But, you need a large non-stick frying pan. You cut all your ingredients into small bite-sized chunks. You parboil and drain your potato chunks.

You fry everything, in the frying pan, potatoes first, then add onions, gammon and whatever else. Shrooms and peppers last. When everything is sauted/browned and mixed together, you lightly beat (just with a fork) 4-5-6 eggs in a bowl, with salt, pepper and dried herbs. Tip eggs in pan with ingredients, scrape round the edges and tilt pan until the eggs have filled any gaps, and the underside is cooked. You have preheated grill. Sprinkle grated cheese on top and slid pan under the grill, to cook the top until cheese is brown and bubbling and eggs have set around the sauted ingredients. We eat with ketchup .

It looks like a pizza, and is very nice cold. It's quick to make too. How many are you feeding? Might need two smaller pans.

Thank you - I think I'll go for the Omelette - sounds quite yummy (ps feeding 4 - 3 of who are big eaters)

If you have leftovers, spanish omelette is delicious cold.

You want to make sure that it is quite thick, so use a small pan if you are only making one with a few eggs. I usually use a dozen eggs

leftovers - what are they? - we never have left overs in this house - I can cook a medium/large chicken and it will be finished the day it was started (unless I specifically say "I'm going to use the left overs for x,y,z tomorrow")......the "eating" DS's are 7 and nearly 4..........I think I'll be buying XXL (if they exist) chickens once DS3 is properly weaned LOL.
