Fresh walnuts - what to do with them?

I have just been given a bag full of walnuts from someone's tree. They are a little bit damp. I would like to cook with them but I haven't any recipes and I'm not sure whether they are the same as the walnuts you buy at Christmas [dense]

Any suggestions?

Pasta with walnut sauce - shell and crush the walnuts and cook gently with a little olive oil and chopped flat leaf parsley. Season. Toss with some cooked tagliatelle and serve with lots of freshly grated parmesan.

yes, the pasta and walnut sauce is good

also chuck them in with the apple when making apple crumble - lovely

(they are the same as the christmas ones, just fresher)

Walnut pesto - I can make that and keep it in the fridge for a while can't I? I just have to keep a layer of oil on the top.

My MIL makes a fantastic walnut and chocolate cake but I haven't got the recipe.

God, I'd be lucky if mine made it to the kitchen without being scoffed by lurking ganette children and hubby.

But on the odd occasion I've smuggled them in surrepticiously, I like them in fruit cakes and banana cakes. They are good chopped and added to pancakes.

Try caramelising them in a pan with dark sugar and margarine, and some cinnamon. THese are nice in salads, or sprinkle on desserts like crumbles/ ice cream (jazzes up the soya stuff for us!)

Last night I made the tagliatelle and walnut sauce and it was delicious, so thanks for the suggestion. I am still finding rogue shell fragments all over the kitchen!

I am now thinking cake. I have a good date and walnut cake recipe that is calling to me (it's a vegan cake too shrooms - are you vegan?)

Yes, date and walnut cake, unbeatable NUT! Delia Smith's recipe (with a cooking apple) is extra moist and yummy. We also add to muesli and eat with yoghurt. Supposed to stop the craving for chocolate fudge cake (doesn't work, by the way)

Ooohh - date and walnut cake, yummo! Yes we are vegans in the shrooms house I have made one before but from veganising an old recipe, so yours would be most welcome...!
Lol re the shell all over your kitchen - that's like our living room around christmas.

beetroot pesto - roast/microwave beetroot and whizz with walnuts and basil. it is really really good.
