Your favourite fruit cake recipe

I've a bag of mixed fruit that I bought to make mincemeat at Christmas but ended up not making it. I'd like to make a fruit cake but something different to Christmas cake. I know I could google but would prefer a tried and tested recipe. Do you have a favourite recipe that I'll be able to find online, something nice and moist (I usually soak the fruit in Earl Grey overnight which helps).

Save the fruit till March and make a simnel cake. This one is particularly good: www.bbcgoodfood.com/recipes/easter-simnel-cake

Now I'm fancying fruit cake don't think I can wait until Easter! But I've never made a Simnel cake so might do that.
Hadn't considered a chocolate and fruit cake but sounds lovely.

Thanks for the suggestions, I like them all - think it might become a monthly activity!

The best fruit cake ever.

4oz softened butter
4oz plain flour
4oz self raising flour
Pinch salt
1tsp bicarbonate of soda
1tsp mixed spice
6oz dark brown sugar
2eggs
12oz mixed fruit of choice- soak in black tea whilst weighing out all other ingredients
Sprinkle of chopped walnuts

Heat oven to 180. Grease and line large cake tin.

Make black cup of tea and pour over fruit mix to soak (or soak in booze)
Weigh all other ingredients into one bowl. Drain fruit mix & stir hot fruit into mix.
Add the 8fluid oz of hot water and stir the mixture -don’t panic that it’s sloppy!
Pour mix into lined tin then sprinkle chopped walnuts on top, poking a few down into the cake.
Bake for 15 mins then cover the top with foil and bake for a further 45 mins or until skewer poked into the cake comes out clean.

I have so many compliments about this cake, a friend asks me to make it every Christmas as her present and everyone always asks for the recipe. I’ve never personally soaked it booze but I know the friend who I got the recipe off used to. I did once soak it overnight in the tea, it made the cake too moist and it crumbled. I use a mix of chopped medjool dates & mixed fruit.

I’m going to try out a few of the other recipes pp have suggested.

Does anyone have a good Parkin recipe? I can’t find my late grandmother’s recipe & any that I’ve googled aren’t nearly as nice.

www.deliaonline.com/recipes/international/european/british/traditional-oatmeal-parkin This is Delia Smith's recipe, which I've always found very good. She recommends keeping it for a few days after making before cutting, and I can confirm it does get chewier with age.

Yes @banivani I make a mug of hot black tea then pour it over the fruit in a bowl and let it soak whilst I weigh out everything else. I then drain the fruit and add it to the cake mix. It gets alarmingly runny when you had hot water to the mix but always turns out perfect. Just don’t forget to cover the cake in foil after the first 15 mins in the oven.

Perfect thank you! I sometimes make a barm brack (tea brack rather) where I soak the raisins in cold left over tea so wanted to check. :)
