Gluten Free Rice Flour Recipe Ideas

What can I make with gluten free rice flour? The recipes I have come across require xanthan gum, tapioca flour, potato starch etc. I don’t have them, but I do have flaxseeds which I’ve read somewhere can be used as substitute for xanthan gum. Any ideas?

I use rice flour in my gluten free chocolate brownie.

Do you have corn flour? Or ground almonds? I tend to use them with rice flour. I do sometimes just make cakes with rice flour (a normal sponge) and they're fine, if a little delicate. I've used it for chocolate chip cookies before too and it works okay.

Rice flour can be a bit gritty, which is why it is usually combined with other GF flours. It does make lovely shortbread though, or in recipes where you use ground almonds

@mynameiscalypso I do have corn flour. How would you go about making cookies with the rice flour? I’d love a foolproof recipe.

@CMOTDibbler DP accidentally bought gluten free rice flour instead of gluten free plain flour a while back and we completely forgot about it. I was hoping it would be the same using normal rice flour but I’m assuming that that’s not the case.

I've used rice flour before no issues; you can also add a little corn flour to rice flour and you have an approximation of gluten free flour which you can use in most cake recipes (not so much breads or doughs). I also used to make gluten free pastry with rice flour and a little corn flour (just using standard pastry ratios) and it was nice albeit crumbly so difficult to make a big tart. I also have made crumble with rice flour before.

@mynameiscalypso Thank you so much! By the way is rice flour gluten free? I’m only asking because I always assumed that it was and so I was surprised when DP got gluten free rice flour Blush

Yes, it should be. I think they just whack 'gluten free' on there so they can charge a premium for it!

Nigella's olive oil chocolate cake is a good one. It's on her website, and I've made it with a variety of GF flours without problems. She also says you can use part ground almond, so grittiness shouldn't be an issue.
