Has anyone got a fail safe chocolate brownie recipe they'd be willing to share??

I'm probably on my way to having tried near 20 different ones and none of them are exactly what I want. Most are too cake like or some not chocolatey enough.

I want a thick, rich, fudgey type brownie.
I went to a wedding once where the mother of the bride had baked the most unbelievable brownies for everyone and I curse everytime I try a new recipe that I didn't ask for hers!

I’ve used Nigella and the Green & Blacks recipes to great success. Pull out of the oven before you think you need to. They cool and solidify more! Better a bit sticky than too cakey.

Now I want brownies! 😁

Ignore the fact they're vegan, there's nothing weird in them and I'm sure you could use standard milk if you wanted. They are pure fudge, I always get asked for the recipe. Might make some now!

Jamie Oliver's 'fifteen' brownies. They even worked (in a slightly different way) when DD forgot the flour or eggs, can't remember which!

We also happily make with milk chocolate if that's what we have.

Yes I agree with tornado of scouts - I fill the sink with cold water, put a freezer cooler block in it. When I think the brownie is just there and ensure it’s fudgy amd dense, put it straight into the sink so it stops cooking. So the recipe is important but also not overcooking it.

I use felicity cloakes recipes - “how to make a perfect brownie” in the guardian. It’s on the internet.

Jane’s patisserie website or Facebook page has lots of good brownie recipes. We love the kinder ones. Like others have said, it’s not the recipe that’s the problem, it’s taking them out of the oven in the right time. For me 30 min is too long, 25 min is too soft so I aim for 27-28 minutes cooking time.
