Creamy noodle soup is one of my favourite solo dinners: fry off a tbsp of curry paste (Thai red/green/mussaman/laksa all good) then add 200ml coconut milk and 200ml stock. The blocks of creamed coconut are good here as you can just use as much as you need, or use half a can and freeze the other half. Leave to simmer while you do the rest.

Cook 1 nest of noodles, and shred a roast chicken breast (or tofu/prawns/extra veg) and add to soup. Chuck a handful of sugar snaps/other small stir fry veg in the soup and cook for a minute. Cooked noodles in bowl, pour over soup, finish with chopped coriander and a squeeze of lime.

I live alone and like to eat well so often have 'one off' meals such as salmon/steak/fish with veg or salad.

But I do like to batch cook and always have something in my small freezer - I'm just defrosting a portion of chicken traybake which I made last week. In a large roasting tin layer:

  • A drained can of cannellini beans or similar e.g. black-eyed, chick peas
  • Sliced onion - I used a packet of frozen red onion
  • 2 sliced fennel bulbs, or any firm veg, e.g. celeriac
  • 8 chicken thighs/drumsticks, skin slashed and rubbed with lemon juice and cajun seasoning

Roast for around 50 minutes at 180C

I eat one portion that day, the other three go in the freezer. It's very tasty, looks nice and heats up well in the microwave.
