Vegetable Casserole

I picked up a packet of Casserole Vegetables (pic attached) intending to make a veggie casserole- possibly in the slow cooker... but what do I actually do with them?!
I got veggie stock cubes, can I just put the veg and some veggie stock in the slow cooker? Do I need to boil the veg first? Does it need something else like a tin of chopped tomatoes in too?
I also got some veggie suet (atora) to make dumplings Grin

They’re good to go!

Tip them into either a casserole dish or slow cooker as they are. Literally straight from the packet is fine. Add about 1/2 pint of stock (enough to submerge the veg and set it going. Add any herbs/spices at the same time and cream if you’re wanting a creamier sauce.

If you want to add meat it’s usually best to brown it or sear it first.

Chopped tomatoes would work well with the red onions if it were me I’d be doing this;

Tip in pack of veg.
Make a cup of stock with boiling water and tip in
Add extra boiling water to cover veg.
Tip in can of tomato’s
Add smoked paprika, salt, pepper and a dash of rosemary or thyme.
Simmer until fork tender.
Add 50g cheddar cheese
Continue to simmer until thickened and slightly creamy.

Then either eat it as is or tip into a pie dish and cover with ready roll pastry. Whack in oven for 20 mins till cooked.

Will it not turn to mush in a slow cooker?
I would do as pumpertrumper says but definitely not in a slow cooker. Unlike a meat casserole a veg one doesn’t need such long slow cooking

@Hoppinggreen Thank you! Yes I suppose slow cooker is associated with making meat nice and tender but not needed for veg so much.

Just to explain- I am a vegetarian. I had a lovely veggie casserole/stew recipe years and years ago from a university friend’s mum- she wrote it on the back of a postcard for me! As his sister was veggie and she made it for me when we went to visit his home town once. The postcard is long gone and no longer in touch with friend really (well I have him on Facebook but might be a bit random to message for him Mum’s veggie casserole recipe..?!). But when I saw the casserole vegetables pack I thought mmm I really fancy that!
Now I think of it, it’s possible her recipe had a tin of vegetable soup in it too!

I find adding some chopped celery, small shallots, a teaspoon of marmite and garlic all help to give depth of flavour.
