Got this for Christmas and want to try everything. So far the tamarind sprouts (swapped chickpeas for lentils) and the miso aubergine and tofu were big hits, hasselback squash not so much. What should I go for next?

Tomato orzo and the multicoloured one with avocados and radishes are surprise hits here. Aubergine one I tried was stringy and bitter and barely edible, unfortunately.

The butternut squash and brocolli sticky rice is really good. The three bean chilli is great too. Both appear on my meal plan regularly.Smile

As above we like the three bean chilli and the sticky rice with broccoli and squash. We also like the ratatouille and roasted peppers. Going to try the roasted tomato orzo and sweet potato Thai curry next. All the recipes look delicious!

I was a bit disappointed with the Thai sweet potato curry, but it might have been because dp followed the recipe to the letter and it was over-cooked. If you try it, definitely check it as it's cooking.

I do the beetroot, chickpea and coconut curry, but use sweet potato instead of beetroot. It's a winner in our house, we have it weekly.

Also second the sticky rice with broccoli dish.

We cooked the chickpea and okra curry but as no okra available subbed it for Mix of courgette and cauliflower. Was delish and will definitely make again.

Next up the 3 bean chilli, the beetroot and chickpea curry, the squash and spinach curry and the miso aubergines!

Ricotta pepper and tomato gnocchi, and the Pearl barley leek dill and tomato (which we top with feta) are both excellent.

My absolute favourites are the potato / artichoke / chard one (actually I think the recipe says spring greens), and the beetroot / leek / harissa / bulghur wheat one
Also like the tomato / mustard puff pastry tart (though needs fresh toms so a summer one), the thing with grated beetroot nests with an egg in, the Pearl barley, leek dill & tomato (made with frozen cherry toms from the summer at this point) & the Tomato & orzo (ditto)
(some of these may be from the main roasting tin one mind you)

DD was given this Christmas 2019 and I think it's been the most used cookbook in our house since then :) (even better, largely by her so I don't have to cook so much!!)

The Pearl barley thing is amazing! Has anyone got the Quick Roasting Tin? I like it even more! Loads of veggie and vegan recipes, as well as meaty/fishy ones that you can easily convert to veggie.

I’m addicted to the roasted Gnocchi and peppers - it’s doable even after a knackering day.

Miso aubergine is a bit of a palaver but really nice.

Did one of the tart things before Christmas and that was smashing - maybe courgette?

It’s such a brilliant book for new ideas. Have recommended to everyone.

Thank you everyone! Just seen all the replies following the kind bump! In the meantime we’ve tried the tamarind sprouts but I used a pack of lentils instead of chickpeas, loved it, also miso aubergine (and I don’t even usually like aubergine!). Hasselback squash I wasn’t so mad about. Chilli good but might swap mushrooms for sweet potato next time, not convinced about the mushrooms in it.

The panzanella has become a staple for us. A few others I can’t bring to mind but the whole book is great.

This last week I've made the mushroom casserole with scone topping and the cauliflower with chickpeas and spices. The first was for the family and was a massive hit. Especially good as my husband takes some persuading that we don't need meat at every meal. I made the cauliflower one for myself and it was so, so delicious. I wasn't expecting it to be quite as lovely as it was. Amazing textures.
