Need ideas for rice

Does anyone have any good (vegetarian) ways of using up rice?

It's not something we eat much of and we seem to have rather a lot. It was on offer earlier in the year (presumably the supermarkets overstocked after the shelf clearing) so I bought a couple of packets and it's still sat there.

Marking as I’d like to eat more rice.

We mainly eat it with curry/dahl or use it in stir fries (but for that you need pre cooked rice really).

We quite often have a nandos style dinner, chicken with cajun rice and corn on the cob.

Do the cajun rice in the steamer, amd literally just add some cajun spice to the water. No idea if this is the proper way to do it but it tastes ok!

have a look at the ready made sachets of rice for inspiration - egg fried rice, mexican rice, chicken and sweetcorn etc.
then any sort of casserole - honey and mustard chicken, beef and mushroom, tagine etc
various curries

what is dirty rice please? And for the beans and rice....do you just add beans to boiled rice?

Another vote for fried rice. We love 'breakfast' rice, with egg, tomato and mushroom.

Baked rice is really good. Just put it in a baking tin, add water and rhe sauce of your choice, Ie curry, passata etc, and then whatever veggies you want, cover and cook on 180 till ready, usually about an hour. It’s like a biryani,

In my East Asian heritage, rice is a staple and eaten at every meal - it goes with everything.

Specific ideas:
Poke bowls
Congee
Risotto
Aranchini with the leftover risotto
Sushi seasoned rice with Japanese omelette

This spiced cauliflower and onion rice salad is lovely.
Caramelised onion and courgette pilaf (recipe uses chicken stock, just sub for veg).
I also make stuffed field mushrooms with a filling of leek, rice and Stilton.

  • Day old rice, cooled in the fridge, makes excellent fried rice, because the grains seperate really well
  • Fajitas, with the rice as a side
  • Stuffed vegetables. Cook the rice in a stock, add some frozen veg, or veg you've chopped into tiny cubes and use to stuff vegetables before baking. Tomatoes, peppers, courgettes, mushrooms all work well. Cheese on top works well, or even mixed into the rice so it helps bind everything. There are some great Greek stuffed vegetable recipes too.

This is delicious

Indonesian rice for 2

Vegetable stock cube
150g Basmatic rice
1 tsp turmeric
Big handful of green beans
1 small to medium carrot
Red pepper
1 inch ginger
2 spring onions
1 lime
pinch chilli flakes
1 tbsp ketjap manis
2 tbsp soy sauce
Bunch coriander
2 tbsp olive oil
handful of salted peanuts
300ml water

  1. Bring water to boil and add stock cube and turmeric then the rice. Reduce to simmer, put lid on and cook for 10 mins. Then remove from heat and set aside still covered.
  2. Whilst rice is cooking trim green beans and chop into thirds. Thinly slice the red pepper. Grate the carrot. Peel and grate the ginger. Thinly slice the spring onion. Chop the coriander. Zest the lime and cut in half.
  3. Heat some oil in a pan and add green beans and red pepper. Stir fry for 5 mins until pepper softened and beans slightly charred.
  4. Add spring onions, ginger, lime zest, pinch of chilli flakes. Stir and cook for 1 min. Pour in ketjap manis and half of the soy sauce. Stir and cook for 2 mins.
  5. Mix the coriander with olive oil in a small bowl. Squeeze in half the lime juice and the rest of the soy sauce. Add grind of pepper and pinch of sugar. Mix together.
  6. Fluff up the rice and stir it into the veggie mixture along with the grated carrot. Serve in bowls with the coriander drizzle on top and a sprinkling of peanuts. If you want a kick add some more chilli flakes.

I cook rice two or three times a week, and almost always as a side to something like a veg curry or a mushroom stroganoff - any kind of stew works well.

Also, vegetable Katsu curry on rice is delicious, and not that difficult (there's a Jamie Oliver recipe for a cauliflower Katsu on the Guardian website but I've used sweet potato and squash too).

Leftover rice cooked gently in milk makes a great porridge substitute for breakfast.

This makes really nice egg fried rice then have with any nice recipe you like.
4 eggs beaten
2cm Lump of ginger chopped finely
Soy sauce 2tbsp
Spring onion chopped.
Mix all ingredients in a bowl. Start to cook the egg mix in a wok with oil. Add the rice (that you have already cooked and cooled)
Continue to cook until egg solid and rice hot. Couple of minutes.
Very yummy.
