I have a burning question for you all, Do you buy Lamb on the bone for your roasts or is it usually boned and rolled?

The reason why I ask is I tried to buy a shoulder of Lamb on the bone at my local butchers and he told me that he never sells any, so now rolls and bones all his Lamb
I was quite annoyed actually, as I much prefer my meat on the bone and had set my heart on shoulder, but had to settle for Leg.

Any thoughts on this terribly important issue

Mmm matter of great importance - I shall have a look in the supermarket tonight. Haven't bought shoulder for a few months, so dramatic change in consumer habits may have taken effect in interim. Delia Smith always recommends meat on the bone as having a better flavour.

Exactly Lilymaid, I think it has more flavour. Is this yet another example of people wanted things all ready prepared (perhaps with some stuffing thrown in) and quicker to cook?

My butcher sells boned & rolled ordinarily, but if you ask him he leaves it on the bone.

Try another Butcher??

I was thinking about that, but around here there are so few. There is one other that is near enough to us and I really don't like it. For different reasons.
The butcher I went to today, is based in a farm shop and the meat is very good, so was disappointed really with his attitude. I think to be fair they have limited stock, but its annoying netherless

I am at that attitude in a farm shop.
Would he do it as a special order?
Other than that, get the Yellow pages out or go looking for your local Farmers Markets on the Interweb (they have links to good butchers, usually)

My beloved butcher's shop is one of those where you see the carcasses actually being 'sawn' up in the back shop. It's a family run business, and seems to have been around forever.

I always buy shoulder of lamb on the bone, from local butcher. I'm sure if I wanted it boned and rolled he would do it, but I like it on the bone.

Bone-in makes a lot of difference to the flavour.
