Vegetarian / Pescetarian family meals

I'm looking for recommendations for veggie / fish meals for picky eaters. Please no obvious veggie lasagna / jacket potatoes / veggie Bolognese recipes, I can already do those. DH and DC are very picky and I'm more adventurous, it's driving me mad. I have a pescetarian who won't eat veg and a meat mad DH so recipes where you don't miss the meat would be great. I have a reasonable store cupboard of ingredients.

Over the last few days I've done squash and feta filo pie (0 stars from the family) and parsnip and cauliflower soup ("bottled farts" apparently)

Any actual links to recipes much appreciated.

@SpaceOp thanks, the red pesto idea would work and blitzing a big batch and freezing would make my life easier. I don't mind doing different meals for picky eaters if it's easy. I did laugh at your DD deciding she doesn't like red pesto anymore, story of my life!

Seconding shakshuka, if it is a success you can freeze the sauce which makes it a very quick midweek dinner, just defrost, heat and add eggs to cook.

I've recently taken to cooking shredded leeks in a bit of butter, mixing in some english mustard and cheese then having the concoction on toast. A fried egg might be nice on top. Possibly not substantial enough for what you're after.

I often do potato bakes (a bit like Dauphinoise), but using less cream (& less calories) or sometimes sour cream instead. Use herbs/ spice to taste.
All you really need to do is layer your potato with vegetables like spinach, leeks, mushrooms, tomatoes, courgette,... & bake with cheese on top. It's a full veggie meal or a side served with fish/ meat.

This aubergine chilli is fantastic (though only 1 tbl soy sauce not 3!) and I increase amount of chilli

I use all 3 spoons of soy sauce and it’s fine. I also up the chilli. I agree it’s delicious, I make it regularly.

Nigella's lentil chilli is very good, in case anyone needs a recipe for that.

These burgers are good but possibly not for picky eaters:

I make a kind of Soanish-style stew with onion, garlix and celery base, then add chopped butternut squash. Cook that for a while then add tinned toms, smoked paprika and various herbs and simmer for a while until the squash is cooked. Add tinned white beans such as butter beans towards the end and serve with crusty white bread and either salad or green veg.

Would your family eat ramen bowls? We sometimes make broth with stock, Thai curry paste and coconut milk then add noodles and serve a variety of stuff at the table like leftover chicken/salmon, 7-minute eggs , spinach/watercress/bok choi, chopped spring onions etc. Then people can pick their preferred additions. You could serve roasted/fried tofu with it too.

Also my MIL makes a lovely cheese and onion pie with sliced potatoes, grated cheese and (I think) cream as the sauce, and a shortcrust lid. She also does a mushroom and chestnut bourguignon that she sometimes serves as a pie too.
