That just looks as though it has scary things in like lemongrass & ginger...is there anything simpler? Or am I way off the mark with a curry?

Not scary, honest. It's quite easy, but you need a blender to make the curry paste.

Are you happy to use curry paste?

Chicken Curry,

Part cook chicken thighs place in an oven proof dish

Mix tin of cambells condensed chicken soup, salad cream, curry paste to your taste.

Poor over the chiken and bake in the oven

This is a real cheats curry. Can give you proper receipes if you prefer but it might be a good starting point.

This is a nice one and simple and quick to make. Mostly store-cupboard ingredients too. I've toned it down a bit and given it to dd too. It's not a terribly spicy one.

what ingredients do you have? I made a yummy veg curry (DH of course complained there was no meat) with fresh ginger, curry powder, garam masala and fresh coriander

also cocount milk / yogurt good for creaminess

I can't use bought stuff cos of salt, so make it up as I go along. I have to use individual spices but you could use a curry powder.

Fry an onion. When starting to caramelise add some crushed garlic and grated ginger (sometimes use a tube of paste) - about the size of a couple of cloves of garlic. Add the curry powder (quite a lot, usually - it will prob suggest amount on container) and fry a couple of minutes more. add any other veg/meat you want. and either tin of coconut milk or tomatoes. If I'm doing coconutty one I put in some canned pineapple and lemon or lime juice near the end.

I do it in a wok so it all fits in the one pan.

At end, add some garam masala or extra 'sweet' spices like coriander or cinnamon. Serve with chopped coriander leaves.

Mine doesn't make a creamy curry, but here it is:

1 large onion
2 tbsps tomato puree
2 tbsps lemon juice
1-2 chillis - de-seeded
1 tsp chilli powder - optional
1/4 tsp turmeric
1 tsp ground corriander

Chop the onion in a food processor then just bung everything else in!

The recipe also says to use chopped fresh coriander but I didn't have any when I first made it and haven't bothered since.

It is actually a recipe for prawn curry but I usually do it with chicken, you need to add some water to stop it becoming too dry.

For chicken: put the meat in a wok or big frying pan with a little oil and brown slightly then stir in the sauce. Cover and cook gently until cooked, adding water if necessary.

For prawns: Put the sauce in a wok and heat thru then add cooked prawns and heat gently.

I do a basic one based on the detox recipe in Carol Vorderman's book. It's the one which has gone down the best in our house.

Fry onions in oil till soft.
Add few tsp of curry powder and a few tsp of cornflour.
fry for a minute or so, then slowly add 3/4 pt or so of veg stock, stirring.

Then just add all the bits you want, I usually use left over chicken from our roast, peas, sweetcorn and sultanas. Good for using up leftovers!

I make chicken tikka massala quite often and my kids eat plenty of it.
You do have to marinade the chicken first though, so might not be as easy as you want, although it is basically just the marinade (yoghurt and spices) then the sauce, tomatoes and spices.

DTD1 only eats korma at the moment (mainly because it is so mild).

CHICKPEACURRY

It is Tommy's recipe so I can't take all the credit but I have tinkered with it

1 large onion, chopped
1 1/2 tbsp vegetable oil
2 garlic cloves,crushed
1/2 tsp chilli powder
1 tsp ground cumin (I sometimes use turmeric in stead)
1/2 tsp ground coriander
1/2 tsp ground ginger
1 x 400g can chopped tomatoes
1 tbsp tomato puree (I use a bit more....)
2 x 400g can chickpeas
450ml vegetable stock
A few big splodges of creme fraiche (my addition)

Fry onion in oil until soft. Add garlic and spices and cook for 4-5 mins over medium heat.
Add remaining ingredients and bring to boil, then cover and simmer for 1hr
Before serving, add your creme fraiche (cools it down for kids and gives it a nice creamy texture)

Serve with rice

Tommy is a MNer who posted the recipe once and I stole it and tinkered with it.

My boys eat that recipe but with extra creme fraiche at the end They think it is spicy baked beans
