I just chuck it in oven bags frozen, cover in Milk and parsley, tie it up and cook.

With it I chop up some potatoes into chip shapes leaving the skins on, spray with oil and cover with paprika and oven cook.

It's not interesting though. Grin

Fish curry. I defrost the fish first but I'm wondering if you can do from frozen.

I swear a finely chopped onion then add freshly grated ginger, a finely chopped red chilli and some garlic and some peppers. Then I add curry paste and cook that for a minute or two. Then I add tinned tomatoes and coconut milk I let this simmer for about 10 minutes. I use fish fillets which I chop up and add until cooked. About 6 minutes. Serve with basmati rice.

If I want DD to eat it, I miss out the chilli pepper and it's warming but not spicy. 😋

I do @BriocheForBreakfast's recipe (it's very similar to one in hfw's quick and easy book), but I put in aubergines with the tomatoes for about 20 mins, then add frozen fish (don't defrost first), poach for about 12-15. It's good.

Or if I've got frozen salmon and/or prawns I make fish pie, poaching it all from frozen in milk.

And I've been known to poach it then add potatoes and make fish cakes.

I don't bother baking it - it's always grim.

Spanish style stew with onions, peppers, potatoes, garlic, stock, fish, and parsley. If you've got smoked paprika and dry sherry, even better.

I often find frozen fish has SO much water in it. Not sure if they are in an ice coating to add weight, but when I defrost them, I gently squeeze them in a colander or between kitchen paper.

I too was going to suggest fish pie or a curry. I also like fish cakes or just bake it whole with a crunchy, crumb topping. Like this one:

I marinate in a mixture of curry paste and natural yoghurt then bake. Remove from oven after 12 mins, spread top of each fillet with mango chutney then put under a hot grill until the mango chutney caramelises.

I usually stick it in a small roasting dish with a tin if chopped tomatoes, herbs, garlic and some butter beans or chickpeas (from the tin- drained).

Mediterranean fish stew - chorizo, onion, tsp cumin, half tsp of paprika, red pepper, tin of chopped tomatoes, white wine, frozen white fish, handful of frozen peas, packet of Tilda rice.

Defrost fish and dry it, Smear a load of harissa paste on the top ans bake in the oven. Serve with ready prep Mediterranean lentils (the ones in a pouch) and some green veg- easy tasty supper!

I’m watching this thread with interest - I too have a big bag of frozen white fish and need inspiration. Leaning towards the fish curry ideas...like a pp mentioned though it seems to get a bit watery as it defrosts? Is it better to defrost first? I’m crap at cooking fish

It cooks quite well from frozen. I sometimes put it in a little foil "boat" (so not quite folded up like a parcel) with whatever flavours I fancy - soy / miso / mirin and some ginger, maybe a bit of chilli. Served with rice and green beans usually, it feels very healthy.

Mexican cod - mix tin of chopped tomatoes (drained) with some salsa, chilli flakes and a little cumin. Put in ovenproof dish, put fish fillets on top. Mix crushed Doritos and grated cheese, use to top fish. Oven 30 minutes, voila!

I make a fish stew as follows:

Fry onion and garlic, add sliced chorizo
Add chopped tomatoes or passata and smoked paprika.
Add chickpeas or butter beans.
Lay frozen fish on top and cover.
Cook for 20 mins and scatter with parsley- it's delicious.

Fish chowder with sweetcorn, potatoes, broccoli, onions, garlic, spinach, is always a hit here, and a good way to use up those leftover vegetables. Serve it with garlic bread.

Or a Provençal style fish stew with courgettes, tomatoes, garlic, peppers & onions served with rice. If you've got any frozen ratatouille, use that as a base.
