Recipe for sausage casserole that 11mo can eat?

I was going to make one for tonight's tea but just looked at the packet sauce mix & it has huge amounts of salt

I want to be able to give some to ds who'll be 1 in a fortnight but can't with all that salt. Problem is I am a rubbish cook unless I have a proper recipe to follow & I can't find one.

I have pork sausages, onions, carrots & mushrooms - what can I do to make a tasty gravy?

add a tin of chopped toms and some low salt stock or just water

you can thicken up with flour

also, chuck in some potatoes as well and plenty of herbs

I use red wine in my sausage casserole and cook for about an hour

I would do this

fry sausages on wok type pan or big saucepan until they brown (5 minutes?) then turn the heat down and add chopped up onion. Cook for 5 ish minutes. Add chopped up carrots. Cook for a couple of minutes. Add a large glass of red wine. Add some water or low-salt stock or water and a teaspoon of marmite. Add a bay leaf and/or whatever herbs are in your cupboard (e.g. basil, oregano). Bring to the boil and cook for 20-30 minutes or so. Toss in the mushrooms and cook them for another 20 minutes.

Sausages..mmmm... I can't do them as too salty for DH without packet sauce or stock.
I have had to learn how to get flavour without those, or any added salt.

The way to get good flavour is to make sure you gently fry the onions first so they start to caramelise. Add the chopped carrot (and celery and garlic if you've got them) and cook some more. That with the mushrooms and either tinned toms or tomato puree should be pretty tasty.

I think if I was doing sos cass I'd fry the sosses first a bit to release some fat and then use that to do the veg in.

I've got most of the stuff I need for those recipes already & we can have it with mash

I agree the sausages are salty anyway; that's why I didn't want to use the sauce mix too.

Am looking forward to tea now

Yes agree with poster who said you can toss in can of tomatoes too

Or a bit squidge of tomatoe puree

Also you can throw in a can of pulses e.g. kidney beans or black beans for more protein and bulk - goes very nicely

Well . . .

I fried the sausages in a little oil, took them out & cut them into chunks. I used the same oil to fry the chopped onions, crushed garlic & sliced mushrooms 'til the onions started to caramelise then chucked in 2 grated carrots & softened them for a few minutes. Then I added 200ml low-salt veg buillon, a tin chopped tomatoes, 2 tablespoons of tomato puree & a teaspoonful of mixed herbs, let it all simmer for a bit, mixed in the sausage chunks & stuck it in the oven for an hour at 170, served it with parsnip & potato mash & sweetcorn and . . .

It was blardy lovely

dh enjoyed it, ds loved it (he ate all his & some of mine - I've just discovered he likes mushrooms) & 2.7yo dd3 refused to touch it, which is par for the course as she won't eat anything cooked that isn't chips, pizza or garlic bread & I refuse to pander to her.

I thought about adding wine but all I have in is a taster bottle of Shiraz & tbh I'd rather drink it Gonna try the sauce with chicken next. It might be good over salmon steaks too [drool]
