Best vegetarian cook book for an inexperienced cook?

My friend wants to start cooking more from scratch and is after a good cook book as a veggie. I’ve suggested a few but I tend to cook without books on the whole so am not sure what there is that’s new out there. Any suggestions very welcome!
I’ve suggested River Cottage Veg as a key one already. And she’s after veggie not vegan please

I forgot to say, I have the Jamie Veg one and am not very impressed so not that one please!
Ideally a book with lots of range, so not just an Italian one, and with quickish recipes as friend works long hours and won’t want to cook for hours after they are done

We have the Hugh one veg every day that we cook lots of things from (unlike other vegetarian cook books where you normally cook max one recipe).

Speedy bosh, easy recipes done in 30 minutes and can add cheese or use dairy milk in place of non-dairy. its our new favourite recipe book!

I like the Hairy bikers veggie cookbook, the Gino di Campo one and the National trust’s veggie comfort food one.

The green roasting tin is a great book and super easy.

I also find the bbc good food website really good.

Another vote for the Green Roasting Tin. So little preparation needed for most things and all cooked in a single dish.

Another vote for Gino D'Acampo, and Chetna Makan (from GBBO) has just published an Indian vegetarian cookbook which might be worth checking out (I got it for Xmas, haven't tried any recipes yet but they look fab)

Yotam Ottolenghi's Plenty is fantastic in my opinion, it is one of the few cookbooks I regularly use. His black pepper tofu and sweet potato cakes have become staples in our house, to name just a couple.
He does have long lists of ingredients but most recipes are straightforward and use mostly everyday ingredients.
The sequel (called Plenty More) on the other hand is useless, I had never heard of many ingredients he uses and found it all a bit ott, to be honest.

I didn’t know Ottelengi had a veggie book, I’ll have to get it for me too as I love his food. I have his Simple one but it’s still lots of meat

I came on to say the Green Roasting Tin too. I've done loads from it and is so easy - perfect for an inexperienced cook.

the Bosh one is vegan yeah but easily unveganised if needed! there's loads of fab but super easy recipes in there suitable for everyone 😀

Sam Stern's Eat Vegetarian is really good for beginners with lots of variety too
