Easy Fish Recipes (no eyes, fins or bones)

DH and I are going to go pescatarian for January, I don't like the smell of meat cooking and think it would do us the world of good making us try other things and be healthier.

Are there any easy fish recipes that are your go to please? (Anything that doesn't entail peeling a prawn or scales, bones or eyes would be good).

Oven baked salmon with flavoured butter - some supermarket fish counters will seal the fish up in an oven bag with a little square of herb butter already added.
I serve with rice and green vegetables.

I also buy fish pie mix from the supermarket fish counter - cubes of salmon, white and smoked fish. Poach in milk with a bay leaf and half onion, use the same milk to make a white or cheese sauce depending on preference, top with mashed potato and bake.

Any white fish fillet: mix plain flour with some salt and pepper. Dip the fish pieces in the flour mixture and fry in a bit of oil (flat non stick frying pan)

Will write a proper shopping list and actually plan for the whole week , hopefully by February we'll be fab hands at not having proper meaty meat and stick with it.

Salmon fillets are very easy , we have them or smoked haddock fillets with savoury rice and roasted Mediterranean type veg . Salmon tray bake with cubed roast potatoes/veg . Fish pie , very easy to make .

I never do anything fancy with fish. I either do it in a pan with oil and butter then a squeeze of lemon, or wrapped in foil in the oven with a bit of lemon, butter, oil and any herbs I have esp tarragon, parsley, dill.

We love this cod and chorizo stew I often leave the chorizo out and add peppers and a bag of spinach to it. I serve with crusty bread. Yum!

If you want zero faff frozen cod fillets are fab. I defrost before I use it.
A couple of favourites,
Mix together natural yoghurt, curry paste of choice and a good dollop of mango chutney, marinate fish, place on baking tray with a little of the marinade on top and bake.
I also do a lovely tray bake with cod spread with red pesto, wrapped in prosciutto on a bed of sweet potatoes, red onion and peppers.
Tuna, chilli, finely diced red onion and sweet potato fishcakes are lovely.

Also I really recommend a proper nicois. Fresh tuna steaks and lovely just set eggs.

We add sugarsnap peas and/or bok choi to this recipie.

Medieval salmon - roll out puff pastry large enough to completly cover a skinless piece of salmon big enough for you all. Sprinkle half with an inch of ginger that has been grated and a small handful of rasins. Put salmon on top, and add some slivers of butter. Fold pastry in half and seal edges. Bake in oven at 200C for 25 mins.

Calamari is beautiful battered and fried (I use flour, egg, salt and pepper but you can make it more exciting. I love sea bass and sea bream just simply done in the frying pan or baked in foil with lemon, olive oil and herbs.

Mackerel fillets on a bed of couscous is lovely and very easy to make. Also mackerel is quite cheap and very good for you.

My best and easiest. Salmon/cod fillets. A big dollop of red or green pesto over the top (skin side down) with a little olive oil. Place in slow cooker (or oven tray at 180) for 20-30 mins until cooked through. Serve with steamed veg. Enjoy x

Oooh lots of good suggestions here that I’ll be trying out. Whilst we’re at it, has anybody got a good way to save all their recipes, eg in an app? I tend to just keep a zillion windows open on my phone!

One recipe I really like is Amelia Freer’s fish Provençal - super easy and the kids all love it. I keep sustainably caught frozen white fish in the freezer which works well, and I always have the other ingredients on hand.

How about Sensational Scallops for a starter. Sauté some scallops and arrange on a scallop shell. Add blob of sweet chilli then blob of cream. Grate parmesan over the top and grill till golden. Never fails to impress.

This is my very fast easy go to fish dish and the kids would eat it from an early age. Very non fishy!
White fish fillets ( works from fresh or frozen) in a baking tray
Squeeze of lemon juice
Pour over double cream
Top with grated cheese- Parmesan is best but any cheese is fine
Salt and pepper if want
Bung in 180 oven for about 25mins- cheese goes all bubbly and lovely
Serve with rice

Lidl do a whole salmon with herbs in their frozen section which you again can cook from frozen, on a baking tray, little drizzle of oil on top and about 25 mins in oven 180. Very lovely.

Kedgeree. We all love it. I make with cooked mackerel and no onions. Add spring onions to adult portions.

Scallops with butter and garlic are lovely, the frozen ones are fine.

We quite often buy the ready to eat mussels.

Prawn stir fry or curry.

Frozen salmon fillets straight on the bbq...really lovely.

Just had my quick store cupboard tuna pasta for lunch:
Small can of tuna, drained
Half a carton passata
Chopped olives
Capers
Quarter red onion, finely chopped
Pinch of oregano and basil
Splash of balsamic vinegar

2 minutes in microwave, serve on penne pasta with fresh basil and parmesan
