Leftover pork

Have a piece of leftover pork cooked xmas day ( didn't get used today ) guessing I can still use it tomorrow ?but any ideas what I can do with it ( not curry )
All i can think of is too slice it and put in gravy to cook through and serve with mash & some veg
Any other ideas or should I be binning it as by time i use it will be 3 days from cooked

Depending on how much you have:

Crispy pork tacos
Pulled pork
Pork ragu
Fried rice
Pizza toppings

Slice it up and put it in the freezer and either use in sandwiches or reheat in gravy for quick dinner.

Chop up, mix with a little gravy.put in baking dish Top with mash & grated cheese, cook 30-40 mins in the oven. Serve with veg and more gravy. Pork version of shepherds pie/cottage pie and nice and simple after all the rich food.

Ramen. Marinate the pork in a char siu marinade. Serve on top of hot bowl of ramen.

Cube it into a mustard cream sauce
Slice thinly into sandwiches with stuffing and apple sauce.
Warm through slices in stock and serve with mash, greens and apple slices fried in butter.
Make a casserole with chopped carrots and onion, stuffing mix, cubed pork, cider and sage gravy. Serve with herb dumplings and mashed roots.
