Best way to cook Beef please

For Christmas day!

Planning to cook it Christmas Eve
(Will it be ok, or will it go tough)

First time cooking without the professional cooking elders of the family :)

No slow cooker

Best ways to cook it please....

Do you put it in water? In Coke?
In abit of oil? Rub oil over it?

What cut is it? All beef should be brought to room temp before cooking it.

Agree with the others. We need to know the cut and the weight before we can advise as different cuts of beef need different cooking methods.

There are a few different methods that work well, for example high heat for 30-ish minutes and then turning the heat way down to finish roasting, or low and slow from the beginning. Personally, I would not cool them the day before unless you want to eat it cold. Reheating it will ruin it. I also hope you have an instant read thermometer.

Also, take them out of the refrigerator for at least 4 hours before you cook them and be sure to season generously with kosher salt and pepper.

Anyone else got any other ideas at all?

Does anyone else cook the beef the day before?

I was just hoping to cook the beef and Turkey today so theres not so much to do tomorrow

If you like it pink & moist:

Fry / seal it in a frying pan - use lard it's magic- it needs to be well done on the outside.

Meanwhile pre heat oven to around 90°C ... place beef on rasting rack so heat can circulate evenly and cook for 6-8 hours.

Have a tay underneath just in case it drips a bit - this should be minimal if proper sealed.

Let it rest and cut just before serving!
